How to Brine and Roast a Chicken (Herb butter style)

Roast Chicken in my Family for as long as I can remember always marked a special occasion of some sort, be it Sunday dinner, a special birthday or yes Christmas Dinner.
It's a classic dish that will never go out of style and there are so many ways to roast a chicken can I tell you lol !!!
But before we get to the roasting, I wanna show you a lil trick that absolutely saved me from the dreaded "dry chicken".
Brining Chicken is something I found out about almost 2 years ago and I am so thankful to have discovered it. It may mean a little bit more prep time but its so worth it when then end result is a juicy, flavorful, tender bird:)

I’ve been brining my chicken for about 3 years Tessi and I will never go back like you say. I even brine my chicken wings before frying lol. This looks absolutely Devine. And that spatchcocking was great for a first time. You have a natural knack for the kitchen hun 😍😍

Tessanne, thanks for this brine recipe. I use a brine every year when I make the Thanksgiving turkey but I have never had the patience to do it with a chicken. Also, mine has never been this elaborate. I will definitely be using your recipe from now on.

This looks ace Tessy. I have never brined chicken in my life, don't think I've ever tried brined chicken either...we only marinate in spices and salt for a night and then off it goes to roast. Will need to give it a try 🙂 I love the butter and herb addition, makes my mouth watering already haha
