I got some bison steaks from The Honest Bison: completecarniv... (if you buy through that link I earn a few bucks) and cooked up some bison ribeyes and a bison flank.
Generally speaking since bison is leaner than beef you will want to cook it to a lower temperature than beef. If you like a ribeye cooked medium (135 degrees) take the bison to medium rare (125 degrees). Use some high heat and flip the steaks often. The "only flip it once" thinking is antiquated and gives you no benefit.

I recently tried bison for the first time maybe a couple of weeks ago. Purchased a bison ribeye at my local grocery store and I've decided that bison will regularly be a part of my diet now going forward. Great stuff.

Definitely worth keeping in your meal rotation. A local ranch I get meat from occasionally recently started a bison program and the first batch will be ready this fall. Can't wait to give it a try.

I've switched most of diet over to bison. Local producer in this area sells by the half pretty reasonably

Yum! Definitely a nice change of pace from beef. Not different enough from beef that it tastes gamey or weird but different enough that you know you are eating a different animal. Reminds me I need to pick up some more bison soon.

Not sure I would necessarily say better but different. I eat steak quite often but don't have bison anywhere near as regularly so when I get the opportunity to eat bison I love it. Definitely a good change of pace now and then.

All bison are grass fed, doesn't matter where you buy it

Nope, there are definitely bison that are finished in feed lots that eat corn and other grains.

@@CompleteCarnivore Nope. there is a federal law that prohibits anything but normal grass-fed and grass-finished bison. And absolutely no hormones or antibiotics or crap.

@@xo7454 ask.usda.gov/s/article/How-are-bison-raised That article talks about finishing bison on grain. extension.usu.edu/behave/applying-behavior/bison-feedlot That article talks about feeding bison in feedlots. Bison do spend most of their time eating grass on the pasture but a good portion of them can be finished in a feedlot and finished on grain.
