Simmered chestnut
(Ingredients) Easy-to-make portions
500g chestnuts
400g sugar
1 teaspoon rum, brandy, etc.
2 teaspoons baking soda
(How to make)
Soak in boiling water to soften the devil's skin Peel off the skin and boil in plenty of water with baking soda for 15 minutes.
Drain off the boiling water and cool in plenty of water.
Remove the naturally-occurring astringent residue.
Repeat the same process for the second time.
Repeat the same process for the third time without baking soda.
Add enough water and sugar to cover the chestnuts and simmer for 15 minutes.
Remove the chestnuts and reduce the stock to a simmer.
Add rum, return the chestnuts and leave for half a day.
Store in a container in the refrigerator.
