Any noodles, rice, if come with a fried egg, alway look better and taste better. If the egg was fried to perfect shape and texture, you are in the heaven! Today, let's see what kind of crazy things we can do to fry the eggs to perfection.
Crack the egg into a small bowl. You can avoid scrambling when frying eggs. The easiest way is simply frying it in the pan. Preheat the pan slightly. Pour in a little bit vegetable oil. Pour the egg into the pan. Its final shape and location in the pan, basically, is something unpredictable like stock market. Although it looks a bit unattractive, but with just a little salt and black pepper, the taste is very nice.
However, like chasing love, being a nice person alone is not enough. You need to invest a little bit in improving your appearance. No need to go to Korea, just buy some egg rings. Egg rings come in all sizes and shapes. But don't worry. You’ll find the right one when you buy the fourth one. Some people say that there is no need to waste money on this. All I can say is, hmm. . . It's not that simple.
Preheat the pan. Pour in a little bit vegetable oil. Brush the inside of the egg ring with oil. Pour the egg into the egg ring. If you are lucky, the yolk will fall right into the centre of the egg ring. Anyway, the egg is very close to a perfect round shape now. Adding a little water into the pan and covering with lid can make egg cook faster.
But there are always some people are willing to waste their life on unimportant details. That’s me. Can we get the yolk to sit right in the centre? It seems that we can have to find another way. Let’s… Take the yolk out first! This time I am going to use a small 12cm non-stick pan. Preheat the pan to 120 degrees Celsius (250 F). Pour in 2 grams of vegetable oil. Pour the egg white into the pan first. Wait until the egg white is slightly set. Carefully place the yolk in the centre of the white. Sometimes the yolk is like a wilful child. Always go where you don't want it to go. At this time, you must act as a responsible parent. Hold the egg yolk at the centre with a spoon. It might take a short while to stabilise the location of egg yolk.

是的,用奶油煎同时把锅子温度调低一些就不会起泡。西餐里要求蛋白要平整光洁,而且不能着色,如果着色在他们看来就是“Burnt”。
