Dehydrating is an excellent way to preserve your harvest, make healthy snacks, and have fruit and vegetables available in the winter.
I love to have dehydrated carrots on hand to put into my soups, stews, and casseroles.
Dehydrating frozen carrots is so easy to do, because you can skip the blanching process as the manufacturer has already done that for us! I personally do not bother defrosting or thawing out my carrots. I buy it at the grocery store, and come straight home and put it onto my dehydrator trays using the mesh sheets. Put cover on. Set temperature to 130 degrees Farenheit. Dehydrate for 6-8 hours. Check the carrots to make sure they are completely dry. You’re better off drying for longer than the minimum hours, rather than not having the carrots done completely. If they’re not dried completely, when you store your item, you’ll have spoilage.
Once they've dried, let them sit for 30 min before you put them into your storage container. They are still warm from being in the dehydrator, and thus you’ll get moisture in your container, and again, you’ll have spoilage. Once they're cooled, you can start gathering them for your container.
For short term storage, I use plastic bags. For long term storage, I use glass jars with food grade oxygen absorbers.
Don’t forget to date your containers so that you can rotate your food!
I am using a 9-Tray Excalibur Dehydrator with a Timer.

I love my dehydrator and use it for all types of fruits and veggies. If at all possible, get one with a timer, as it makes a big difference in getting the best results without overdrying your food.

Thank you for this video. I've been dehydrating foods for many years. Have done lots of frozen mixed vegetables. Decided to do more dehydrating of individual soup ingredients for mix and match stews, pot pies, etc. Bought enough crinkle cut carrots, yesterday, to fill my Excalibur. Checking this morning to see what others had to say about them. Thank you. Just what I wanted to see/know before I get started loading trays in a few minutes. Tip: I bought a plain, rectangular, inexpensive plastic cat litter pan from one of the $ discount stores. (Type of plastic isn't an issue with dry foods & limited contact.) Size and shape of these pans is ideal for use when emptying dehydrator trays. Easy to set the tray, at an angle, in the tray. Can use a vegetable brush or pastry scraper to remove the stubborn bits. When the trays are empty, stir the food to help quickly cool it. When ready, clear a space in the middle of the tray to set a jar. I use a scoop and funnel to fill them. Any spills fall right back into the pan. To finish, move the remaining food to one corner and pour from the pan into the jar. Tip: When putting frozen foods on my dehydrator trays, I set the tray over my sink. Many small ice crystals will fall through the mesh into the sink. Less counter clean up. And, if there's a lot of ice, I work it through the mesh, as I'm filling the trays. Less water the dehydrator has to vaporize. Again, thank you, this morning. Happy 2022!

Hi where did you get the mesh ,did it come with your machine?

Mine came with it. Sometimes you can buy them as an extra for your particular dehydrator.
