He did everything right in this video. When the fish starts shaking after he bashed its head, its pretty much dead and what youre seeing is muscle spasm (no more pain). The heart continues to beat so he bleeds it out shortly after. I forget what the wire in the spinal column does but in either case its no longer feeling any pain.

Sad to watch. But that is how fish get killed and get prepared for fish and chips. Sad but true. Sad but necessary. Hungry people like to eat food and fish is food. Hungry people got to eat. Someone got to kill and clean the fish and get it ready for the dinner plate.
The wire was stimulating the nerves. Something about getting the blood out & lactic acid. Don't worry, I'm pretty sure he killed the fish. Though he probably could have been more sure.

It destroys the nerves so the fish doesn't feel it when he starts to cut and he doesn't wiggle as much. Trust me the butcher is doing the fish a favor here.
I see so many comments calling this guy out for torturing the fish to death and I want to clarify somethings: Ikejime is scientifically proven to be the most humane way to kill a fish as we don’t know if they feel pain but we are sure they feel stress. During suffocation (most common method) the fish releases thousands of stress hormones that harm the meat’s flavor and will accelerate deterioration. During Ikejime the fisherman/etc will make sure to kill the fish instantly by hitting its brain, from now on the fish is dead and its movements are only muscle reflexes. The wire is used to destroy the spinal cord and to make sure that the animal is indeed dead.
Are you sure about that? He just hit the head. The first proper way and the most humane way of killing a fish is to kill it through brain with a spike.
