Quick and easy way for your heat deflector is take aluminum foil and fold it over about 4 times on itself into a square the size of the sear tray. I got the KC Combo too and that’s what I do that way you don’t have to have that plate in there it’s nice and low profile. I’ve cooked ribs, pork butt, steaks, etc this way with no burns. Also did chicken wings tonight actually made them crispy by drying them off with a paper towel pretty good and then shaking them with about 4 tablespoons of baking POWDER, put in the fridge for about an hour smoked for 1 hour then set the KC Combo to about 450 for 20-30 minutes came out awesome! I've actually cook chicken wings like that but wasn't a fan of it. I like the texture you get more by the way I do it, but that's the beauty of BBQ so many ways of cooking food. Thanks for watching and plenty more of videos on the KC Combo

This is really the only way to get legit crispy skin on wings. You have to fry them at the end or else you have shitty smoked wings with chewy tough skin.
