This video will show you how to deal with mold in your kombucha or scoby follow along with the video.
Feel free to leave a comment suggesting something for me to cook.
the temperature that the kombucha is brewing at anything below 24-29c or 75 85f can slow down the brew becoming acidic and allowing mold to take hold, another common issue is not using enough starter liquid from the previous batch to give the kombucha a PH boost meaning mold can grow in the batch due to the low acid content.you always want to make sure the area and the equipment is not contaminated the tea and sugar i use is separate from my drinking or cooking sugar also make sure any utensils or equipment you prepare your new batch with is clean, close by house plants and other ferments can also lead to a mold outbreak.
as well as areas being too cold having an area that gets humid can also lead to mold so if your kombucha is brewing in your kitchen near your kettle or stove top the excess steam can lead to an increased chance of mold developing.

This is very helpful. I was just given a batch of SCOBE a week ago. I am on the first fermentation phase, obviously. I will be looking for mold. Thank you!

Didn't make kombucha for like 6 months. Neglected my Scoby. When I went to clean out my scobys I added some sweet tea and after a couple days I had mold on top.. definitely need to keep feeding your scobys

Good to know, do you recommend some disposable gloves and should they be latexfree and powder free gloves?

personally i use nitrile gloves you can handle a scoby without gloves but soap / hand sanitizer can harm the scoby

@@PepperAmmy Thanks for the quick reply, do you think it is possible to test for sugar in homemade kombucha with a blood glucose meter? I've been making Kombucha for nearly seven months now, decided to use organic black tea instead of green tea... And I've noticed one of the batches has a pea size mold spot on top of the scoby....... I'm devastated, hopefully some nitrile gloves might help.

Hi! So if the mold is just at the top and there are a lot of layers underneath the moldy part of the scoby, can I peel off the top and several layers underneath and use the lower parts?

typically thats not how mold works there is more to it than what you can see ive had a batch ive tried this with and mold came straight back its why they dont recommend cutting moldy parts off bread and eating the rest the spores are alot deeper than surface level... by all means you can try it but there is a good chance it will come back

My scoby looks black and definitely some fungus (mold) on the top. Is it drinkable if i remove it?

there is alot more to mold than just what you can see the spores can get into the booch if disturbed ive tried making a scoby from a batch that had a bad scoby in it and that was contaminated too, its the same as cutting a moldy part off of cheese chances are the spores are deeper than you can see. hope this helps :)
