In this adventure we take a hike in search of laetiporus sulphureus or Chicken of the Woods. I discuss the methods that I use to identify, harvest and prepare this wonderful mushroom, and briefly discuss some of the health benefits associate with this and other polypores.

What’s the best time of year to harvest them in Minnesota?

Although you can find them anytime of year, Fall is the best time to look for these tasty treats. I filmed this in October in Wisconsin. When the leaves are falling, you don't have to step too far off of hiking trails to see them. Hope this helps and good luck hunting!

It is important to know what the fungus is growing on. Eucalyptus for example, is not safe to eat the polypore from.

@mrsenstitz, that's a great point! I recall reading somewhere that we shouldn't eat the type of Chicken of the Woods which grows on coniferous trees, even though they are essentially both the same mushrooms.

It is extremely filling. You cant eat a lot. Is that tree marked for cutting?

Honestly, I don't recall... I do know that it was severely damaged during our crazy winter storms this year; its crown came down over the ski trail under it. Given its condition and the fact that it was right there on the trail... it very well may have been.

yes, you can pressure can them OR just pickle them... drying is easiest but they turn a little 'tough' .. soak in tap water for 24 hours THEN cook them in LOTS of water..

That's a pretty definitive statement. You might be living under a rock if you didn't know that chicken of the woods is the most common name used for this polypore. You'll find it in identification books and in every mushroom/fungi group.
