A mistake here. Hard to see but at 0:46 look at the two screws on the grate. Then look at the plastic ring being embedded in the thinset. The plastic ring has two larger slots (about 45 degrees rotation from the grate) that are supposed to line up with the screws. In certain situations, this will not allow you to set the drain low enough as the two screws will be resting on the ring instead of going through those holes. Hope that makes sense.
Hmm, doesn’t seem like there’s much thinset under the metal portion of the drain he’s tapping on. What stops it from settling more? After watching other videos this is a pretty big omission(!) You definitly want thinset in there.
I thought the same thing then I ordered the schluter kit. When you look at the round piece of abs it has small slots along it that act as the weep holes. It’s interesting once you see that small detail

yep stopped watching after 7 seconds, hiding the plumbing with mortar before video starts doesn't let you viewers see the difference between a perfect world and what they will be seeing
