Ingredients (we have made a big banitsa!):
- flower (half a teacup, around 100 g.)
- baking soda (a teaspoon)
- 200 g. yogurt
- 200 g. izvara (in English: cottage cheese)
- olive oil (half a teacup, arould 100 ml.)
- melted butter (half a teacup, around 100 g.)
- phyllo dough
- 4 eggs
- sirene (white cheese) in pieces (around 300 g)
How to prepare:
Beat the eggs with a fork. Add the yogurt and mix well. Mix the flower and the baking soda in a cup and afterwards, add them to the egg mixture. Mix well. Add the izvara (cottage cheese) and mix well as well. Finally, add the sirene (white cheese) but be careful when mixing - you should keep the white cheese in pieces. Don't forget to mix the olive oil and the melted butter. Pour a table spoon of the oil mixture on the pan and spread it.
Open the phyllo dough. Spread a tablespoon of the oil mixture on one side of the phyllo dough and then fold it. Spread two tablespoons of the egg mixture on the folded phyllo dough. Fold it and put it in the pan. Repeat this step until the pan is full. The pieces should not be too tight to each other. In the end, pour a tablespoon of the oil mixture on the top of the banitsa.
There is no need to preheat the oven. Set it to 180 degrees Celcius, conventional heating, so no fan or grill and you put the banitsa at a low level of the oven. Leave the banitsa in the oven for about 30 minutes until it has a golden yellow color.
After you take the banitsa out of the oven, make sure you cover it with a cloth for about 15 minutes - this way it will taste better.
