How to make a chip shop style Cheese and Onion Pie | A British Classic!

I'm going to show you how to make Individual chip shop-style cheese and onion pies that are lovely and cheesy and melty in the middle. Perfect for a meat-free dinner.

Oven Temp: 200c/400f
Ingredients:
• 2 x 320g packs ready-rolled shortcrust pastry
• 1 medium potato, peeled and cut into 1cm cubes
• 2 tbsp unsalted butter
• 1 large onion, peeled and finely sliced
• 2 tbsp plain flour
• 125ml whole milk
• 50ml double cream
• 150g mature cheddar cheese, grated
• ¼ tsp mustard powder
• ¼ tsp salt
• ½ tsp freshly ground black pepper
• 1 egg, lightly whisked
Instructions:
1. Preheat the oven to 200C/400F
2. Unroll one of the rolls of pastry and slice into four squares.
3. Line 4 individual pie dishes (measuring approx. 11cm diameter x 3.5cm deep) with the pastry squares, so the pastry covers the base and sides and overhangs slightly.
4. Use a fork to prick several holes in the base section of the pastry.
5. Cover each pie case with baking parchment and fill with baking beans, then place on a tray and bake in the oven for 10 minutes to par-cook the base of the pies.
6. Remove the pie bases from the oven, leave to cool for 10 minutes, then carefully remove the parchment and baking beans.
7. While the pastry bases are cooking, make the filling.
8. Add the diced potato to a pan and cover with water. Bring to the boil and simmer for 12 minutes - until the potato is very tender and starting to break apart. Drain and put to one side.
9. Melt the butter in a second pan and add the sliced onion. Stir and cook over a medium heat for 5 minutes until the onion starts to soften.
10. Sprinkle on the flour and stir to coat the onions. Cook for a further minute.
11. Add the milk a splash at a time, whilst stirring, until the milk is fully incorporated.
12. Add in the cream, cheese, mustard powder, salt, pepper and cooked potatoes.
13. Stir together until the cheese has melted and the potatoes break down. The filling should be thick and only just pourable.
14. Divide the filling between the four pie cases. Brush a little of the egg wash onto the edges of the pastry.
15. Unroll the second roll of pastry. Slice into four squares and place a square on top of each pie dish.
16. Cut off any excess pastry, then crimp the edges of the pastry together using a fork.
17. Brush the tops of the pies with egg wash and pierce two holes in the top of each pie using a sharp knife.
18. Place the pies on a baking tray and bake in the oven for 20-25 minutes until golden brown.

My mum recommended your channel to me. I've been living in the US for six years and it's difficult to find traditional British food out here. I'm from the South so didn't grow up with this pie, but I still want to try making it. I love your videos and have subscribed!

Not too sure if it’s a North/South thing, as I grew up in East London and pies were part of growing up, except for me it was pie, mash and ‘green liquor’ - perhaps it’s more working class culture, as in the 50’s & 60’s pastry was cheap and filling meal so allowed you to feed a family on little money. This sounds like a Monty Python thing… “You think you had it hard…” 😆

Just come across your remarkable and delightful cooking site and am really happy that I did. Im a single male of 77 years of age and like my food lol. Your presentation is very easy to understand and the content is easy to follow, I will be living on pies now, one problem I dont like onions, what can I use to replace them?? Australia is a nation of pie lovers, but I haven't come across this one before. It looks delicious and I'll be cooking some of these for the family this coming week. And it ticks all three main food groups. Dairy, vegetables, and pastry. Can't fail. Thanks for the recipe.

I am glad you have shown this because I have made individual Pies in individual little Pie Dishes but I wanted to use those Foil thingies so I could freeze with confidence instead of in the Pie Dish. However I consider myself Ham Fisted in delicate matters and looking at the Foil Things and my big Mitts I was not confident doing that task and every other on-line person like yourself sort of glosses over the process and they are magically done. I now feel more confident thanks to your - as usual - down to earth presentation and I will now give it a go. In all fairness wih a different filling. Relevent question regarding freezing three and eating one - which is my normal way, freeze before or after final baking? With my Pie dish ones I baked first, but not completely and baked from frozen until done. What would be your recommendation? Sorry for going on a bit but I could not think of a way of summarising and still making any sense!!

Thanks for this, going to try this but also add a little mushroom and sweet corn kernels and maybe a little leek, sort of make it a mix between a cheese and onion pie and a chicken and leek pie but without the chicken

You can’t beat homemade cheese and onion pies. These look great, Nicki. Where abouts down south have you moved to? Are you settling in okay? I’m currently in South Yorkshire but looking at houses in East/West Sussex. Any advice on house hunting when you’re so far away from where you want to move to? Thank You x

Had cheese and onion pie for the first time on a trip to Greenwich to see the observatory (Goddard's Pies) and was absolutely blown away. Been looking for a recipe to make it here in the states and am going to give this a try! Also, I've never before seen an oven where the door slides under and out of the way, I've got to keep my eye out for one of those the next time I'm in the market for an oven!

Thank you 😊 I haven’t tested a large version yet, but I think the filling for four people would work in a large pie. I would possibly add an extra potato. I came from Southport, but now in Brixham. My husband was born in Oldham funnily enough! Bournemouth is lovely!

Substitute the potatoes for macaroni and you' d have macaroni cheese in pastry.

Looks lovely, but sorry I just can't get my head around putting potato and cream in with the cheese and onion. On this one I have to agree with another comment, my ancestors would also be turning in their graves. They taught me that cheese and onion pie only consists of cheddar cheese and onion filling, no potato nor cream. If this is what is in a chippy (i.e. Hollands) pie filling consists of I now know why I don't like them.

Proper Cheese and Onion Pie doesn't have potato in it. My mother will be turning in her grave. Chop the onion and boil until soft. Drain and retain a couple of tablespoons of the onion water. Melt the cheese in the onion water. Add the onions and mix. Stick it in your pastry and bake. Guaranteed far superior to any cheese and oinion pie that is an imposter 2/3 full of potato.

I have tried plenty of cheese and onion pies with potato in and they are not the same and I was expressing an alternative that is actually what it says on the tin, cheese and onion, not potato, cheese and onion. Thats as bad as saying spring vegetable and putting chicken in it. It's a free world by the way to comment, so I have no wish to scroll past without expressing an opinion. Finally I would have thought the sentence "my mother would be turing in her grave" might have just given you the clue that I was not being super critical just offering an alternative...... but thanks for your "mean spirited" reply.....
