The baking soda makes it essier to mix through the popcorn. If its to sticky next time put the popcorn in 250f oven for 45 min. Stir to break up caramel popcorn every 15min. This dries out the caramel so its nice and crispy.
@@Masked1608 The water is entirely optional; however, caramel made with water (called "wet caramel") is usually a little softer than that made without. And either way, for this purpose, I'd add just a touch of baking soda at the end to lighten the caramel and make it easier to spread throughout the popcorn.

honestly i make caramel popcorn all in one pot just add my oil corn and salt wait for 30 sec then add in 2 table spoons of sugar the caramel is forming while the corn is popping 🤷🏻♀️🤷🏻♀️ and voilà caramel popcorn served

If I make a big batch and put it in a big container, about how long could I expect it to keep? I doubt it would last longer than a few days (a week, maximum), but is this something that would go stale after a few hours like regular popcorn, or could I expect some level of freshness preserved by that layer of caramel?
Tried it the caramel was burnt. Tried it again and i added the butter when the sugar turned yellow and it wasn't burnt. I think he edited the butter part
I tried this!!! And it was good! Pro tip: make sure your pan is clean when you melt the sugar and water. It won't turn out great otherwise. And the proportions I used for 1/4 cup of unpopped kernels was 1/3 cup sugar and 1/6 cup (40 mL) water!
I would recommend a caramel sauce recipe: Combine 1 cup brown sugar, 1/2 cup butter, and 1/4 cup milk in a saucepan over medium heat; bring to a boil. Cook until thickened, 1 to 2 minutes. Remove from the heat and stir in 1 teaspoon vanilla extract, and its done. My grandma always used to make this and she mixed this with warm milk made over the stove, but im guessing that it works well with popcorn too.
