Hi! SueRan, Thank you for sharing. This is how we generally make the caramel pudding. But just a tip... Butter the pudding bowl before you put the caramel in and thereafter the pudding mixture. Once it is baked run the knife like the way you did and turn it upside down. You will see that no caramel sticks in the pudding bowl and it slips out effortlessly. Try using lime juice instead of vanilla and see the difference.
I don’t use lime juice in this recipe. But I know some use it in their puddings. I would use about 1/2-1 tsp of lime or lemon zest. Juice might make the milk curdle..
Hi everyone!! Just wanted to mention that in this recipe I keep the Pyrex dish on stove for few minutes to melt the sugar a little bit. I would not recommend anyone doing it. It was something I did just to make life easier. Pyrex dishes will break exposing to direct heat. So please use this method shown in the link below to caramelize sugar. if you place a towel in between the baking pan and the tray, it can help eliminate the bubbles and the flan will look smooth. Also, you can warm the mixture before pouring in the pan can reduce the baking time.

Flan should not have holes. Holes indicate that the dessert is either overcooked, which would make it too "tough" in texture, or cooked at too high a temperature which would ruin it. Also condensed milk , to me, does not belong in this delicate and yummy dessert. Creme caramel is made in many countries, and I'm sure everyone substitutes ingredients. As for me I'll stick with the classical French recipe. this delicate and yummy dessert.
Tip only: For creamier Flan you may just use the egg yolk instead of the whole egg, this way you can also eliminate the holes or bubles in it. If you think its a waste of egg white, here's a spongey cake recipe Cake: 5 egg whites 1cup fresh milk 2 cup all-purpose flour / cake flour 1 cup sugar 2 tsp baking powder Steps: 1. Mix all dry ingridients and milk. 2. Beat white eggs and add sugar gradually, consistency should be stif. 3. Fold the meringue to the batter. ***You may bake the cake sperately but I prefer cooking it all along with the flan 4. Follow the flan steps on the video, but before putting it in the oven add the cake batter but do not mix. 5. Follow the oven heat and baking time from the video. 6. Turn the flan cake updise down in a plate Enjoy!!! You may search *Puto Flan* in youtube for visual instructions.
Hi! Thank you! After making the mixture when you pour it to the dish with caramel strain the mixture if you can. This will help to take off some air bubbles that cause holes in the pudding. Also will strain any lumps & such.

You can use Pure egg yolks (10-12pcs) add 1 can condensed milk & 1 can evaporated milk 1tsp of vanilla essence then mix. Put it in a cake pan or llanera Then Steam it for 35-40mins :) its More Creamier if we use pure egg yolks

if you are caramelizing sugar without adding water do not stir, swirl the pan around so it won't burn. When sugar turns golden brown its done, be careful not to burn..:)
