How to make Chicken Tikka Dansak British Indian restaurant style!

Ingredients:
serves 1
1 tbsp vegetable oil
2 tbsp boiled lentils
1 large breast cut into 8 pieces, chicken tikka
(Watch me make it here: bit.ly/ChickenTikkaMarinade)
pineapple ring
wedge of lemon
chopped coriander leaves to garnish
3/4 tsp ginger
1 + 1/2 tsp garlic
1/4 tsp salt
2 tsp sugar
pinch of fenugreek leaves (crushed)
1 tbsp tomato puree

260ml onion gravy
(Watch me make it here: bit.ly/BIRGravy)
*Spice mix
2 tsp chili powder
1/4 tsp garam masala
1/2 tsp coriander
1/2 tsp cumin
1 tsp curry powder
Method:
1.
Put a tablespoon of oil in your preferred pan and put it on the hob on a medium high heat, wait till the oil is sizzling hot before throwing your garlic , ginger, salt, crushed fenugreek leaves.

Stir the ingredients for a good 10-15 seconds until they have taken in the heat but make sure they aren't burning!

1 tablespoon of tomato puree, stir it into the other ingredients for 10 seconds then add in your spice mix! stir them in until you have a paste like consistency to your ingredients.
Don't worry if there's too much moisture or too little, you can reduce further if there's too much moisture or add boiling water if there is too little. just make sure those spices don't burn! only give it 30 seconds or so before adding....

2 tablespoons of boiled lentils , your wedge of lemon and your pineapple ring and your chicken tikka. Give it a stir until everything is nicely mixed and let the ingredients warm through for 30 seconds.

Add your onion gravy once everything in the pan has warmed up and bring to a simmer, it might start to spit at this point so consider letting simmer with the lid on and stirring frequently or simmering on a lower heat.
make sure to scrape the bottom of your pan gently so as to not damage it but firmly enough to make sure nothing is sticking and burning. optionally you could add green chillies at this point.

continue to simmer and stir until your sauce is reduced to a thick custard like consistency, this should take about 5 minutes approximately. Don't be afraid to take more time as the longer you cook it the more thick and flavoursome the sauce. as long as it doesn't burn!

Hi Latif, have you ever considered offering more authentic versions of the dishes on your menu, as well as BIR style? Now that more people have traveled to Asia and tastes have got more adventurous,I would have thought there'd be a demand for it. Most BIR dishes taste very similar to me, I'd rather have the real deal, personally! I'd love to see more of this kind of thing on your channel too. Cheers from Yorkshire!

I've made this a few times now and tonight was the first time using a proper aluminium pan. The difference is incredible and my home curry is better than the local takeaway, credit to you Latif

Dansak is my absolute favourite, sweet and sour with just the right amount of spice for my tastes, I think I'll give this a try at some point as the finished result looked delicious. Cheers, great channel.

After spending years using a different base gravy, I finally made a batch of Latifs recipe & knocked up this Dhansak. Both me & the wife were pretty blown away. Great depth of flavour & the closest to restaurant curry I've made. Awesome!

I have followed a few people on here before to take me back to my Balti Triangle days in Brum and to be honest, nothing has captured the taste. By chance I have discovered Latifs Inspired and immediately I saw my all time favourite dish - dhansak so I had to throw myself into it - I have to say this is the most authentic tasting dish I have ever cooked. I am seriously impressed with myself - and I guess Latif has helped on the way!!!!!! Seriously, I absolutely love what you are doing - such a kind heart and such a great teacher. The only thing I would ask is, could we have some more veggie dishes? All the best Latif and everyone who is trying dishes a long with Latif!

Hi just to say I did your lentil Dahl today and it was truly delicious with some rice. And now after watching this I’m going to save my Dahl for this in the week. My most favourite dish the dahnsak. I also did your Nan today but I burnt them in my wok! Not sure if it was too high or the wok I used - anyone got any other method of cooking Nan ? My hob is electric. Loving your tutorials thank you so much 😊

I found both flavours and potion sizes can be quite small down here in Kent. It's interesting, the further up North you go, the better quality food you seem to find. Goes with several different cuisines from my experience. I love chicken tikka Dansak, by far my favourite curry, and best ones I've had have been in Newcastle, where they're served like in the video with real pineapple in. Down here in Kent, I've never found one with pineapple, I don't know what they use down here for the sweetness, if it's just sugar, or some kind of concentrate, but it makes so much difference having real pineapple cooked in your curry. As well as portion sizes I like smaller pieces of chicken also, around 8 pieces would be amazing, I find you normally only get around 5-6. I need to make some more base gravy, but I look forward to trying this recipe soon!

Brad Oldridge That’s not true mate. Some disgusting restaurants in Bradford, Leeds, Manchester. Remember, the golden rule: go to an authentc Bengali/Bangladeshi restaurant like Latif’s anywhere in the UK. And you can’t really go wrong for the best Indian food.

Hey Latif, what lentils do you use? are red split OK or do you use a specific type? Either way i love your videos and am trying out many of them with great results. Your base gravy is epic and i dress it up in so many ways and need to add this one to my list.

Hi Latif, love all your BIR video's however I would really love to see how you would cook one authentically without the base gravy, I do use your base when I'm cooking your recipes, however I would much rather you do a non gravy so I can experiment without it. Hi! Love the channel, I'm working my way through them! I like my curry's HOT & SPICY! But NOT all chilli powder. It gives me heart-burn! I like fresh chillies OR NAGA! Could you please show us how to make a good Naga curry? Preferably with tandoori chicken (off the bone) as I find that not many restaurants do that unless asked, and it is DEFINITELY the best meat for a Naga! Thanks, and keep it up!

That is my absolute number one favourite curry. I picked up a tip or two watching this as well. I have a question: Can you freeze the lentils in their "boiled state?" That is, before they "meet" the rest of the curry. Seems like a good idea to cook the lentils in "bulk" say, two chefs' spoons, and then freeze them?

Hi latif i am loving your videos . There was one thing i wanted to ask esp on your curry videos. Are the amount of spices you use based on one meal for one person . Example : lamb rogan josh one teaspoon of chilli Would you double the spice for two people as theres more sauce in the pot?
