CREAMY ONE POT BUTTERNUT SQUASH PASTA
Ingredients
2 tablespoons olive oil
4 cloves garlic minced
1 teaspoon fresh thyme
½ teaspoon red pepper flakes
salt and pepper
5 cups chopped butternut squash approximately one small squash
1 ½ cups chicken stock or vegetable stock
500 gram box Barilla Penne Rigate pasta
1 cup heavy cream or half and half
½ cup grated parmesan cheese
fresh thyme shredded parmesan, and red pepper flakes for garnish/serving
Instructions
Heat a large, deep skillet over medium heat.
Add the olive oil, garlic, thyme and red pepper flakes, and saute until fragrant.
Add the chopped butternut squash and stir until coated.
Add the chicken stock and cover. Let simmer for about 15-20 minutes, or until the butternut squash is soft.
Meanwhile, set a large pot of salted water to boil and cook pasta according to package directions.
When the butternut squash is soft, turn off the heat under the skillet and allow it to sit uncovered for a few minutes.
Add the cream and parmesan, stir well, and puree with an immersion blender until the sauce is silky smooth (using a regular blender works too!)
Drain the pasta and add it into the skillet , tossing it well in the sauce to coat.
Sprinkle the top with some more freshly shredded parmesan, few sprigs of fresh thyme, and additional red pepper flakes, if desired.
Serve immediately.

Or, what I do is make the pasta risotto style

Pasta should always be cooked in a separate pot from the sauce. As pasta is cooked, it releases starch, which would make the sauce too thick. Cook them separately, and then add the cooked pasta to the sauce. You can use a *little bit* of the pasta water to help thicken the sauce. Mix the pasta with the sauce, and serve with cheese if you like.

Made this dish for Dinner tonight and came out Delish! My Husband went in for Seconds. I added cream Cheese, Ricotta cheese and the heavy Cream. Definitely gonna keep this recipe on hand!

The skin is very edible and when cooked it's extremely soft and nutritious and once it's blended you can barely tell. Gosh I'm doing it up extra , Julian cut Zucchini red onions , bacon and chicken. I'm always going the extra mile. No wonder my hubs and I are gaining weight. 😫.. ok I'll put only 2 bacon strips. Ha i added Mexican cheese with parmesan too. Ok I'll chill.😄

Someone gave me a butternut squash & I didn’t know what to do with it so I made this. It came out good but I forgot the chicken stock! Lol. It still had a light creamy flavor though

Is there a non-dairy item we can use in place of the cream? I'm thinking about almond milk but not sure what the results would be. Also, I think a squeeze of fresh lemon would do justice here. :) Or lemon rind?

I haven't tried it but here's a comment from the blog: "Oh my god! Favorite fasta EVER! I made it vegan by using coconut cream and nutritional yeast instead of the parmesan. I want to eat this for every meal forever ❤❤❤" Hope this helps!

Not happy with my results 😕. I used a butternut squash that was several months old. I think it lost it's sweetness.😪 My sauce tasted like chicken- flavored mashed potatoes.
