Ingredients
1lb strawberries
Danni’s peach mango rum (recipe on Patreon)
1/4 cup granulated white sugar
Pancake box mixture
1 - 2 cups water, for batter
Vegetable oil for frying
One large pound cake
Zest from 1/2 of a lemon
1/4 cup powdered sugar
2-4 sprigs of mint for garnish
Maraschino Cherries
Instructions
1. Thinly slice strawberries and discard stems
2. Add strawberries to a medium bowl and cover with Danni’s homemade peach mango rum
3. Add sugar and stir to combine
4. Cover bowl and soak strawberries in the refrigerator for two hours or overnight
5. Preheat oil in a large pot
6. Prepare pancake batter in a large bowl according to box instructions
7. Cut one slice from your cake and cover completely in batter
8. Carefully place battered cake into hot oil and cook both sides until golden brown, 3-4 minutes each side
9. Remove from oil and place on a wire rack to cool
10. To assemble, place cake on a plate, add whipped cream, strawberries, lemon zest, powdered sugar, mint and cherries
