Love this recipe! I had to add approx 3/4 cups of bread flour during the last spin and a tbsp when shaping into a ball right before proofing. The wetter dough was perhaps due to the hot weather and higher humidity in this part of the world. Overall the taste and texture were superb!
Just made this recipe and I can’t believe it turned out that good (I couldn’t braid it so I Divided and folded The dough into buns so I could pull them apart) 😋🥰

I made this following your recipe and 40 minutes is way too long I burnt my bread. Also, why is the proportion so big? I know I should’ve sized it down, but I try to follow it. I’m very upset at myself for burning my bread. Sure it’s my first time ever making this but I am very upset at myself for burning it💀😭 if you are following this, please don’t make my mistake. Check on your bread. Also, you can cut down the proportions so you don’t overwork your stand mixer like I did mine.😭😭😭😭😭😭😭

made this today for french toast for mother's day tomorrow. tastes absolutely delicious. my only comments are that it nearly burnt up my kitchenaid mixer because the dough was sough heavy. I wish you had weight measurements for the flour because i think i added a bit too much, but other than that, i think it's going to make a great brunch. i also want to mention that this made waaaaaay more bread than i was expecting. there's no way these loaves would fit in my loaf pans, so i just baked them on a cookie sheet.
I also had the same issue with my kitchen aid. Beautiful piece of equipment but it seemed strained😢. It did mix the dough well though. Twice in one day.
Hi. I love your recipes. I tried to locate the Bosch mixer but it is not available at Amazon & they cannot say when it will. I really find it more efficient than the KA mixer.

thank you for including the grams in the recipe! We always use measurements like cups in the US, but I learned from making brioche once a couple years ago that all flour is not created equal. I tried measuring in cups and my bread turned out super dense. I was told to try measuring in grams next time. Night and day! I try to measure everything in grams now!
So after some reading, I thought I'd come make an additional comment. This isn't actually Brioche but a very similar bread called Portuguese Sweet Bread. This bread is what Hawaiian Sweet Rolls are based on. Great recipe nonetheless!

I'm in a temperate climate, and used more than a quarter cup more flour to get the dough to come together. Other than that, THE BREAD TURNED OUT GREAT! Highly recommend!!! 👍

Wish i had watched before started my king cake recipe. It said it should be smooth and elastic-- i wasn't sure what it meant, but your video makes it so clear. I'm definitely saving this for reference next time.
I use saf instant yeast brand will that be good for making brioche .. I made brioche already and when I proof it I got 3 times bigger but when I baked it was raw in the middle
Brioche makes a fantastic Tarte tropézienne. If it's good enough for Brigitte Bardot, it's good enough for lesser mortals like us....and not that difficult to make either. 👍
Is it possible just to bake one half of the dough and leave the other half to bake another day? 🤔Alternatively can I just halve the ingredients? As there are just my other half and me, it would take me a week to finish one loaf!!
Hi! :) Yes you can definitely divide the recipe in half. We make half the recipe all the time. But for some reason I find that I always need a little more flour when I do this.
I just made this recipe this week.. so good & highly recomended i try diferent recipe with more time consoming but i didn't get the same result like this .
I followed your recipe but mistook 2 step: 1. I added 200g of sugar from step 1. 2. I melt butter in oven to liquid then add to the mixture 3. I dont have mixing machine, so I rest the dough 20' then adding melting butter and do kneading and the texture became so wet. I added 200g flour and it still wet. I dont know what happens. It fails seriously :((
Hi Philip :) I have noticed that it depends on the brand of flour. Also, did you use all purpose flour or bread flour? This dough is supposed to be a bit sticky. You don't want to add too much flour to prevent any tackiness. I hope you enjoyed the brioche bread :)

this is not brioche to my knowledge we call it dutch bloeder in my country. brioche is fermented/proof over night and without liquid. I have tried michel roux brioche recipe but didnt succeed. it might be due to the butter or eggs.

Hi :) You can cut the recipe in half and bake only one loaf. Or you can make both and freeze one of the loaves and enjoy later. Brioche bread freezes very well! Whichever decision you make, I hope you love it!
I just finished this.I am trying to be vegan so I used an egg substitute.I could not bring myself to substitute the butter with oil,so I used regular butter.Thank you for your video...Let it be known that I shall not be shamed because I claim to be trying to be vegan and used butter.I still love meat and butter and make no apologies to any militant vegans out there. Hi James :) Glad to hear you enjoyed this brioche bread! There can be several factors that would make this bread dense. First, if your yeast is old/bad/dead. You yeast mixture won't have a frothy consistency and won't make your bread fluffy. Second, if your yeast is good but you over cooked/warmed it. You want to keep the milk about 110 when you put in the yeast. Then you want to keep it in a warm place. However, if you put the mixture in a really warm place then you can kill the yeast and it won't rise in your dough. There is a proof setting on some ovens that works. The warm setting on the oven is too hot. Lastly, you may have put too much flour in the dough. Spooning the flour and leveling off with a knife is the best way to measure flour. Same thing happened to me when I first made brioche a couple years ago.. Density will have more to do with how you measured your flour. Not all flour weighs the same, so we should always weigh it out in grams instead of measuring by cups. Even spooning it into a cup and tapping or scraping with a knife can be enough make it too dense. Considering it's of European origin and Europeans really have always set the standard for gastronomy, it's always good to take their advice... weigh your ingredients.
Before I will bake this recipe I just want to clarify regarding the measurement of the flour you said 7&1/4 cup of bread flour in 870g but I weigh, it’s not 870g it’s more than a 1 kilo, pls reply thanks ❤️
Hi Margie, yes the recipe calls for 7 1/4 cup flour. Per google, it should weigh about 906g. So the weight of the flour you measured could be affected by the way you scooped into the measuring cup. The best way to measure flour is to spoon the flour into the measuring cup and level it off with the back of a knife. Scooping it straight into the cup can result in compacted extra flour. I hope that helps answer your question.
No it means you missed some of the instructions. If the dough is to sticky you can add more flour and keep mixing. Different brands of flour can have slightly different results. Hope that helps :)
I don’t have a machine like that and I tried making it with my hands. I useful half of the ingredients as I think is toooooooo much. It didn’t go well. Any suggestions on how I can make without a machine and could u give me another measures for a smaller dough? Thanks!
Hi, if you cut each ingredient in half, it should make exactly have the amount. It really help to have room temperature ingredients when working the dough by hand.

I have found that different brands of flour require different amounts of flour. You want this dough to be a bit tacky but workable. If you add to much flour it won't be as light and fluffy. Hope that helps clarify :)
