Thai Mango Sticky Rice 🥭✨
Serves 2
1 cup or 215g glutinous rice
2 pandan leaves
Soaking Liquid:
2/3 cup or 165ml coconut milk
1/2 tsp salt
1/3 cup or 80g sugar
1 pandan leaf
Coconut Milk Sauce:
3/4 cup or 180ml coconut milk
1/4 tsp salt
1.5 tsp rice flour + 1.5 tbsp water
To serve:
Mangoes
Crispy mung beans
Method:
🔸Wash and rinse the glutinous rice. Cover with clean water and soak for 2 hours.
🔸After 2 hours, drain and place the rice in a heatproof bowl. Add 2 pandan leaves and steam for 25 minutes.
🔸Cook the all the soaking liquid ingredients on low until steaming hot and the sugar has melted.
🔸Once the rice is cooked, immediately pour the soaking liquid over the top and stir to combine. Cover with a plate and let it stand for at least 30 minutes.
🔸For the sauce, mix the rice flour and water together. Then pour into a pot with the coconut milk and salt. Cook until thickened and set aside to cool.
🔸Serve with sweet mangoes and a sprinkling or crispy mung bean 🧡

Pulut Mangga
Hidangan 2 orang
1 cawan atau 215g beras pulut
2 helai daun pandan
2/3 cawan atau 165ml santan
1/2 sudu kecil garam
1/3 cawan atau 80g gula
1 helai daun pandan
Kuah santan:
3/4 cawan atau 180ml santan
1/4 sudu kecil garam
1.5 sudu kecil tepung beras + 1.5 sudu besar air
Mangga
Kacang hijau tanpa kulit (digoreng)
Cara cara:
🔸Basuh dan bilas beras. Rendam selama 2 jam.
🔸Selepas 2 jam, toskan dan letakkan nasi dalam mangkuk tahan panas. Tambahkan 2 helai daun pandan dan kukus selama 25 minit.
🔸Masak santan, gula, garam, daun pandan dengan api perlahan sehingga panas dan gula cair.
🔸Setelah pulut masak, tuangkan santan ke atas dan kacau hingga sebati. Tutup dengan pinggan dan biarkan selama sekurang-kurangnya 30 minit.
🔸Untuk kuah, campurkan tepung beras dan air. Masak dengan santan dan garam hingga pekat dan ketepikan untuk sejuk.
