Vegan Malaysian Omelette (Telur Dadar)

Slice:
1 red onion
1 red chili
2 spring onions
Dry Ingredients:
1/4 cup or 30g chickpea flour
1/4 cup or 30g rice flour
1 tsp corn starch
2 tsp nutritional yeast - bit.ly/3qUQz7A
1 tsp mushroom seasoning - bit.ly/3qYJ67o
1 tsp white pepper
Kala namak (Himalayan black salt) to taste - bit.ly/3HLGEIq
MSG (optional)
Wet Ingredients:
1/2 cup or 125ml of water
1/4 cup or 50g silken tofu
1/4 cup or 60ml aquafaba & pinch of cream of tartar

Roti John
Serves 2
160g soft or firm tofu
Salt to taste
1 tsp black pepper
1/2 tsp mushroom seasoning - bit.ly/3qYJ67o
2 tsp cooking oil
2 hot dog buns
1/2 a serve of Vegan Malaysian Omelette Mix
Bake tofu at 200°c for 15 minutes until golden and crunchy. Crumble into small pieces and stir into the omelette mixture.

Serves 2
1 packet of instant noodle seasoning of your choice
1 block of instant noodles
1 serve of Vegan Malaysian Omelette mix

2 large eggplants
