Mustard powder can be found in the spices section (FYI you will definitely not find powder in the condiments section!) of most markets. Most Asian markets carry soybean oil and can be found abundantly in health food stores although you would be paying a pretty penny for it. **Just discovered on the Vegetable Oil I bought from Wal-Mart that it is Soybean Oil!!** I am going to try making this with a Nutribullet hoping a shake/pulse method will work. It emulsifies from the bottom so maybe I will not have to shake? I tried using it as a blender once to puree and ended up liquifying in just 2 seconds, so should be powerful enough, but I hope not too powerful. My husband has a sensitivity to MSG (a migraine and dry mouth for hours after consuming), so I'm so happy I found your recipe that doesn't contain this ingredient!

Happy news, Steve. While I had no luck using my stick blender, I was able to make a perfect batch of your Kewpie recipe using a food processor. I used exact amounts of your ingredients and ran the processor at high while slowly drizzling in the Soy bean oil. It fully emulsified into perfect mayo. Takes a wee bit longer as you slow drizzle the oil into the yolks rather than all 300 ml at once, but in 2 mins you have a full batch of perfect mayo. Won't have to buy it from Amazon anymore. Thank you for that!!!

The great thing about this mayo and recipe is that I don't have to make it! I live in Japan. Mayo is so cheap here.

Steve, I just brought some Kewpie Mayonnaise from Coles. The ingredients in Kewpie Mayonnaise is; Soybean Oil, Egg Yolk (9.5%), Distilled Vinegar, Salt, Rice Vinegar, Water, Flavour Enhancer (621), Spices (contains mustard), Antioxidant (385).

Thank you so much for this recipe Steve. Being diabetic and on a very low carb, high fat diet, I have been looking for Japanese style recipes I can use without rice. I loved the Kewpie mayo but may not eat soya bean oil. Hopefully a very light olive oil will work too! Can't see why not, although it may alter the taste slightly. I am used to making my own mayo with half olive oil and deflavoured coconut oil. Will use cauliflower rice with all the normal flavouring ingredients and avocado and the mayo to make the cauliflower a little sticky and then ... we will have sushi!

Jennifer Holman Thanks Jennifer, Olive oil will make a great Mayo but it will be considerably different in taste, Olive Oil emulsifies much easier and needs a less eggs. I have a video here that will explain a simpler Mayo. Thanks Teacupika, They often don't use Soy Oil, which a must, and a lot of Egg Kewpie state they use a lot of egg which gives it that rich falvor. I am glad you like it. I had to make it up myself, as I couldn't see any others that were close. HUGE thanks ;o) Steve

It is way too easy Anne, if you haven't got a stick mixer and you use Mayo, I would urge you to get one. Regular Mayo like my other video only needs 1 egg and tastes 100% nice than shop bought. Have a great Day Anne. Steve

@@ismzaxxon People can have (an extremely rare) bad reactions to glutamates in general but not specifically MSG. MSG is just salt and glutamate. If you eat tomatoes, corn, broccoli, flour, mushrooms, peas, potatoes or meat of any kind then you eat MSG and hundreds if not thousands of other foods which MSG is naturally occurring also. Anti-MSG is nothing but anti-asian racism. There is no valid science behind any MSG phobia.

hi..kewpie mayo isn't cheap here in southern california at my Asian store either ! I do love the kewpie bottle so soft and nice for squeezing wish more companies used, I can see why now it how it costs more so many eggs used and soy oil...I would recommend people use the rice vinegar it's taste is so mild compared to white vinegar..thanks so much enjoy your recipes thanks for all the hard work and effort a delight to watch and learn...stick mixer is on my shopping list why I have never purchased one is beyond me I see it has many uses and not just a lay around taking up space gadget

The Stick Mixer has so many Uses but I have to say mine is mainly used for Mayo making and Soups. I had to research the original Kewpie to work out the ingredients, I tried it at first with a lot less eggs and it just would emulsify. Once I realized Kewpie claim to fame was high Egg content it all made sense, the rest was easy. Thanks, I hope you enjoy your first home made Kewpie. Steve

The recipe is missing MSG, which is what gives Kewpie its umami enhanced, savory flavor. But otherwise very good, Steve. I would never have guessed it used soybean oil, rice wine vinegar, and only used egg yolks rather than whole eggs, including the whites.

+namayake Thanks but I really don't think the MSG is needed, it's the Soybeen and rich egg that makes the flavours so unique compared to the flavour to regular Mayo and a little salt gives a similar enhancement. Still thanks ;)

Mayonnaise by definition is made with only egg yolks. That crap on the kewpie bottle that says egg yolks rather than whole eggs is just none sense.

do you also get headaches from eating seaweed, tomatoes (I personally hate them, it's a texture thing), mushrooms and cheese? because they all naturally contain msg. I'm sure it's just a placebo affect from hearing old racist anti-asian fables that msg causes migraines. p.s: vaccines don't increase the likelihood of developing autism

The secret ingredient is MSG, that's the only way you're going to make Japanese mayo taste identical. But other than that you nailed the other components and ingredients.

Could this be used when making a potato salad? I love making mayo with the stick mixer, hence never run out of mayo, and best of all I know what my mayo contains. I save a fortune cooking yummy food. Thank you for your great recipes.

Idk if I might get an answer but I was excited to make this.i did everything and it was runny and I even added an extra egg yolk and nothing. I used cold eggs idk if that's the reason why it didn't work

I can't say but adding egg won't help.. You're emulsifying oil, not eggs..

Hello I was looking for a simple and effective way to make kewpie mayonnaise and I just discovered your recipe, I wanted to know if soybean oil is really necessary? Can someone please explain to me why that mayo didn't split. when i use a processor and i add the oil in very slowly, sometimes you add it too quickly and it splits, so i am SHOCKED to see this didn't split when adding all the oil all at once.

+Noah Aubert It's all magic Noah. When mayo was invented many years ago they didn't have stick blenders, if they did the old way would never have taken off.. Try it.

I gave this a try. I followed your recipe to the letter. Used a stick blender like yours and used a container virtually the same as the one you used. 6 yolks, 300ml of Soy bean oil, 1/2 tsp of salt, 1 Tbls of rice vinegar, 1/4 tsp mustard powder. I used the stick blender...full speed...and it never solidified into Mayo. It just become egg colored, soy bean oil that was as pour able as the oil itself. I used the blender for about 6 mins and it never thickened up into mayo like yours did in only a few seconds. Do you have any idea why?

​@@Steve-Owens Hey Steve. It's a Braun two speed stick blender. Low speed for initial chopping / blending...then a high speed setting for puree and whipping. In high speed...it's very high speed. I tried this with yolks that were fresh out of the fridge. Should they have been room temp? I blended at high speed for like six mins and it never thickened up into mayo. Just remained slightly thicker, more yellow oil. I have to get my Kewpie on Amazon and use it a lot. I would love for this to work so I can make my own. Thanks for your help.

@@5dmkiii60 ​ @5dmkiii60 OK, well the Braun should have the power, some Aldi and cheaper stick mixers just don't rev up fast enough. So with that I am a little surprised.. Room temp is always best but I don't think this was the problem. It could be the eggs though perhaps the age or size... Try it with a smaller batch, or divide up what you made into three batches, to one add another Yolk and to another add a few tablespoons of oil and see which activates the setting. Sometimes it's surprisingly more oil that is needed, so try both.. If that doesn't work then it's hard for me to say for sure without seeing the oil, that's the only other possible rogue element..

@@Steve-Owens Thank you Steve. I'll give your suggestions a try. Eggs were graded as large, in fridge about a week after purchase. Oil is Wesson Vegetable Oil, but ingredient list on back says: "100% pure Soy Bean oil." Oil was room temp, eggs were fresh out of fridge. Braun blender is VERY powerful and fast in high speed mode, so I didn't think it was that either. I'll just have to tinker around to see if I can get it to work. Thanks so much for your generous time and tips.

Yes, but make quite a small batch as it has about 2 weeks shelf life in the fridge if you make it fresh.

Hmm.. Don't try this with Fresh Yard eggs.. I have done it twice and failed miserably... Bright Yellowish orange Mayo, and won't thicken at all.. Had to add the whites of the eggs and more oil to thicken it up.. Has to be the yard eggs and Soy Oil, because, I use Veggie oil and yard eggs and it works great.. I even measured them into a 1/2 cup this time, and cut back on one egg yolk, and stayed under the 1/2 cup like in the video.. It really needs more oil and the egg whites to work with fresh yard eggs... Hmm... Twice fail, twice recovered..

I don't have that issue. Using vegie oil is a very different product, not kewpie, and is a lot simpler to blend with just 1 egg to 300ml. I make that most weeks. Soy oil is different but essential to Kewpie

Hey Steve, I followed the recipe to a T, and I used a stick blender. Everything mixed perfectly and did not separate, but the result was very liquidy and had a yellower tint than yours. I can't figure out how to fix this, can you help?

Yellow is OK, probably strong egg colour, Is your stick mixer and good brand?

Steve's Kitchen yeah, that's what I'm getting at, I had no problem getting the oil to emulsify, it just didn't become the same consistency as yours, it was the consistency of a liquid

I read on Google that Soyabean is just vegetable oil? I'm in Australia, i found Soyabean oil in a spray but not liquid form. May have to settle for canola or vegetable ?

Susan Hubble No it's not just vegetable oil, that would make just regular Mayo, the recipe is very different ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-Ey6N8wQDmk0.html for kewpie you need Soybean, I got mine in Melbourne fairly easily from an Asian Store, try one if you can..

The oil doesn't make much difference, and in many countries soya bean oil is sold as vegetable oil. The main difference between Kewpie and normal mayonnaise is the fact that Kewpie contains more egg yolk, rice vinegar instead of white vinegar and MSG (which isn't in this recipe). The fact it uses soyabean oil doesn't make any significant difference...

+Kyser Ortega I was also thinking the same thing. The process seems complicated and requires rare ingredients. I think adding a little rice vinegar and lemon juice to a mayonnaise would do the trick

Not sure I'm with you there, look I have a recipe for simple Mayo, that is real easy but you can't replicate Kewpie with Mayo and Lemon Juice, it will give you something cool but Kewpie isn't about Lemon and Vinegar, it's about high egg content and Soy. Any way I agree with your principle in basic have fun, it's all about fun.. Steve

Mirror none of the ingredients are rare ones. Adding lemon juice and rice vinegar to normal mayo wouldn't produce the same flavor. Main reason is you use soybean oil and not vegetable oil.

+Marilda Matos You can use any kind of mustard powder, but I prefer Colman´s, the best of the best. This mayo recipe is not equal, as Kewpie, sorry to say it. There are a bit more to the recipe, just a little pinch a koriander and 2 drips of mirin vil do it complete.

I mean it couldn't be thick. maybe my egg yolk was cold? do I need to warm the egg yolk in room temperature? I used the one from fridge. is that problem? I used half of your recipe, so I tried 2 times and waste 6 egg yolk. luckily, my mom didn't complain

The quantities are very important with Kewpie, it needs a high egg count to emulsify the soy oil. Are you using a stick mixer like mine? a regular mixer just isn't fast enough. The egg temperature shouldn't be a huge factor although I never chill eggs so I could be wrong there. Thank you Mom :o) If you have the mix don't waste the Soy oil, add more egg yolks and whizz more 2 an the most I would say? See if your mix is half the egg yolks can be smaller and effect the thickening. Steve

Many Blenders just don't have the speed, that is why I say you're "going to need a Stick Mixer" If it's not coming together and you have used the EXACT? ingredients then that is the problem.

Be careful though, some very cheap stick mixers also are weak.. The sort of rubbish Lidl or Aldi sell. Stick with brands like Braun or similar.

Hi. So i tried making this awhile ago. and i put the ingredients just as you have said. But mine is still so oily and watery ... its not getting any thicker. so i added 3 more eggs excluding the 6 i had already added just to see if it'll become thicker.. it's not.. what do i do ?? Please help, cause I don't wanna throw it away also cause it'll be such a waste. P.s : I'm using a normal food processor cause I dont have a stick mixer

Nikky Rajapaksa I find the Food processors don't have the speed to emulsify, Kewpie is the hardest of mayonnaises to make as Soy Oil Doesn't like to emulsify, It too me many attempts to get this recipe right, so I know it works but it need the Stick mixer, a blender might work but I doubt a FP will, sorry Nikky, stick mixers are king in this recipe.. Hello Steve, i am trying to make home made kewpie and added all ingredients exactly per your instruction. However, no matter how long we tried to blend it, it did not cream up like in the video. What do you suggest we do to fix this, add the egg whites as well?

Steve's Kitchen We initially used a stick mixer to blend it. But it proved less powerful so we ended up using a KitchenAid hand mixer. I think the trick was to mix the mustard powder, salt and egg yolks while slowly adding in the soya bean oil. After it thickened, we added the rice wine vinegar and mixed thoroughly to finish it off. We managed to make the mayonaise but it had a strong aftertaste of soybean oil. Is that normal or should we add seasoning like lemon juice?

Sorry for the late reply, RU-vid is not great at sending me replies. The Soy Oil is usually fairly mild and is masked with the other Ingredients a seasoning. I have found some Stick Mixers just don't have the power, so I am glad you got there. I am a little surprised that the Oil Flavour is overpowering, maybe it's the brand? But yes a little salt, lemon and even a little sweetness may mask that. Steve
