A type of mountain cheese made from cow's milk. Its shape resembles long pasta threads, usually braided or bundled. You can meet smoked flails of dark brown color and white flails - not smoked.
For production I used:
-5 liters of raw milk
thermophilic cultures acc. dosage
-1ml calf rennet 1:17000
