How to make oscypek cheese 

Oscypek is a hard smoked cheese from sheep's milk, characteristic of the Polish mountains. Since February 14, 2008, oscypek has obtained the status of a Protected Designation of Origin (PDO).
My oscypek cheese is made of cow's milk.
For production I used:
-16l of raw cow's milk
-3ml of calf rennet
-net 100/36
