My dad is Mexican and his mother taught my mom to make many Mexican dishes. The one dish I never learned to make was Mexican rice. Mom passed away a long time ago. I just kept looking for the way I remembered her making it. When I came across your video, I knew this was it. Thanks so much!

I'm making some tortillas right now (their resting) so I haven't seen you in a while and looked you up and you are the only one that uses 3 cups of water and THAT IS PROBABLY why I have had such dry and uncooked rice. Your rice looks great and you've done a great job with the video. My point is not to be negative. I just ask you please not to pour grease down the sink. It will eventually clog your pipes and is very bad for the city system as well as it also clogs the outside pipes. I keep a coffee can and pour off all oil into the can then throw it away when full. Since so much coffee comes in bags now it's harder to get coffee cans so I recently saved & used glass jars - any glass jar with a lid. Thanks for the video.

Good that you pointed out not pouring grease down sinks. I have known many people who believe that as long as they run hot water down with it, it can do no harm.

Looks yummy. And I appreciate your sense of humor while you cook. Been reading some of the comments. For the person who said oil down the drain clogs your drains. Not true. Oil doesn’t get hard. Fats and shortening do and will clog unless u flush with hot soapy water. Duh!
Thank You for your Flour tortilla video. I know make homemade flour tortillas for every meal. Just the other day it was cold and my kids came home from school and I asked them what they wanted for snack and they said your homemade flour tortillas with butter!! It made me feel so good. My mom passed away a few years ago and I just wish I had paid more attention. So now I'm making sure I pass these traditions down to my children. It's an art thats being lost. So Thank You. After watching a bunch of videos and making around 10 different recipes in the last four days I'm finally done. The rice is outstanding. But I did make a change. I know usually it's 1 cup of rice and 2 cups of water so I used 2 cups of water instead and it was perfect. Light and fluffy. Thank you for the recipe.
Rice turned out phenomenal! You are the best. Please keep sharing some more videos of your delish food. And to those holier than thou. People complaining about oil, and water. Geezh cut her some slack. She already apologized!
