For the Mochi donut
* 1 cup all-purpose flour (minus 1 tablespoon) 130 g
* 1 tablespoon corn starch 10g
* 3/4 cup glutinous rice flour 87g
* 1 tsp baking powder 4g
* 1/2 cup granulated sugar 100g
* 3.5 oz silken tofu
* 1 egg
* 2 tbsp water
Strawberry Glaze
* 4 oz White chocolate
* 1 drop pink food coloring optional
* 2 oz fresh strawberries
Matcha Glaze
* 4 oz White chocolate
* 1/4 cup Heavy Cream simmered
* 1 tsp Matcha powder
Nutella Glaze
* 3/4 cup powdered sugar
* 2 tbsp unsweetened cocoa powder
* 3 tbsp milk
* 3 tbsp Nutella

1. In a large bowl, sift together 1 cup minus 1 tablespoon of all-purpose flour, 1 tablespoon cornstarch, 3/4 cup glutinous rice flour, 1 tsp baking powder, and 1/2 cup granulated sugar. Then set it aside.
2. In a separate bowl, press 3.5 oz of silken tofu through a fine-mesh sieve. Make sure to scrape the bottom of the mesh to ensure all the tofu is used up.
3. Now add in 1 large egg and 2 tbsp of water. Using a whisk, mix just to combine.
4. Now add the egg and tofu mixture to the flour mixture and combine using a spatula.
5. Once the dough begins to take shape, you can begin working it together using your clean hands.
6. Now form the dough into little balls about 7 grams each. You should get a total of about 64 tiny balls. You will want to use a kitchen scale for this step.
7. Now cut 8 (5x5 inch) square pieces of parchment paper and begin forming donut shapes on top of each paper using 8 dough balls for each donut.
8. Fill a heavy-bottomed pot with about 2 inches of corn or vegetable oil and heat it to 325-350 degrees Fahrenheit. It’s best to use an instant-read thermometer to get the perfect oil temperature for donuts. Make sure the oil isn’t too hot or it will burn the donuts and leave them raw in the center. Having too low of heat will overcook them and make them dry.
9. Place the square piece of parchment paper and donut onto a large slotted spoon and gently slip it into the hot oil. Fry about 2 donuts into the pot at a time. You don’t want to overcrowd the pot.
10. After about a minute or so, use tongs to flip the mochi donut over. And with those same tongs, carefully peel off the parchment paper and discard. Once the donuts have browned on one side, flip them over and fry for another minute.
11. Using a slotted spoon, carefully transfer the donuts to a plate lined with paper towels to absorb the extra oil.
12. Strawberry glaze: Start by melting 4 oz of white baking chips in a microwave-safe bowl. Then add 1 drop of pink food coloring and 2 oz of fresh strawberries and blend them in using an emersion blender. You can make this in a regular blender too. Make sure your strawberries are not too cold or you can seize up your chocolate. If they are straight out of the fridge just heat them up in the microwave for about 10 seconds. Now dip the donuts into the glaze and transfer to a cooling rack to set.
13. Matcha glaze: add 1/4 cup of hot simmered heavy cream to 4 ounces of white chocolate chips. Mix until smooth, then whisk in 1 tsp of matcha powder. Mix again and dip a few donuts in the match glaze.
3. Chocolate Nutella glaze: sift 3/4 cup powdered sugar and 2 tbsp unsweetened cocoa powder into a bowl. Then whisk in 3 tbsp warm milk, and 3 tbsp Nutella. Dip the donuts and let them set. I decorated my mochi donuts with some drizzles of melted white chocolate and a little bit of crushed special k cereal. Enjoy immediately.

Thanks for explaining what cake flour is because I try to look for it in grocery stores and they usually don't sell it. Will be trying this out! Just an FYI for those who have access to Asian grocery stores, you can get the glutinous rice flour for much cheaper like $1-2/bag.

That is not how cake flour is made. That’s a lie! Cake flour is made with soft wheat, not by replacing it with cornstarch. That is why cake flour has less protein and is recommended for baking cake vs. all purpose flour. It is also processed finer and bleached.

@@sourbubble if you plan to make a cake that calls for cake flour; it is absolutely not a good substitute. After 12 plus years of being a baker and cake decorator, you can definitely tell the difference between using cake flour vs. AP flour with cornstarch added. It does not yield the same texture.

@@maiaflatebo also as a baker i can attest to that. there’s no true perfect sub for cake flour but if i recipe calls for only a bit of cake flour the ap/cornstarch mix is better than nothing - just dont expect to get the best results

Omg thank you so much for uploading this recipe! I live in Melbourne Australia and recently I found out that they made a store making these in Sydney and I was about to travel to this place after lockdown! But thankfully now I can make it! I’m so glad you did the matcha 🍵🍃 that’s totally what I would make! Btw I’m surprised you bought the glutinous flour from Amazon they are sold pretty much in all asian stores here.

@@SimplyHomeCooked Thank You! I made them and they came out overcooked/too hard. I think the oil was too hot. I bought a thermometer for this and it kept reading different numbers at different parts of the oil. The dough wasn't chewy :( it took me like 2 hours to pinch and weigh the little balls. I'd like to try again though!

The temperature is really important for these donuts. And you want to be careful not to overcook them. They won't taste the same that way. I hope you get a chance to make them again and it turns out beautifully :)

I have a local oriental market bakery that makes these and they're freaking delicious. Definitely gonna try to make them myself so I can eat a lot of them. Might even try to skip the ball shapes or heck just make them into sticks like small churros or something. Ain't nobody got time for cute.

or instead of weighing each ball out, i just divide the dough into a few parts, roll them out into a long strip (adjusting width depending on how big you want), then cut into uniform pieces, and roll the pieces in my hands to end up with same sized balls🙂

@@chriskeo392 I bought a thermometer, realized it didn’t go as high as I needed it to, tried using a surface area thermometer, also didn’t go as high as I needed it to. And honestly I’m just bad at frying things anyways so yes, I’m a quitter :)

Hi Julie, you are very welcome! Technically you can use it but Mochiko is a little different since it is less elastic and more doughy. However, it would be the best substitute for it :) Hope that helps and I hope you make these Mochi donuts! :)

Hi, brown sugar is a little more moist so it might give it a slightly runnier consistency. I have never tried non dairy glaze so not sure how it would turn out.

When I lived in Japan, I ate these at Mister Donut. I’ve never realized that it had mochi in it. I wondered how they got the donuts to be that chewy. Learned something new today.

Thank you Tammy! It should take a few minutes. There isn't an exact time. You have to knead according to how the dough looks. Hope that helps clarify. Let me know how it goes :)

Technically you can. I have just never tried to make these Mochi donuts in the air fryer so I am not sure on the temperature and time. If you make them in the air fryer please let me know :)

@@dee1366 it didn’t taste like any mochi donut I’ve had before. It was dense and didn’t have the right texture. It definitely needs less flour and more glutinous rice flour.

Um... if you need glutinous rice flour u can find at Asian market for under $1. I need to make this ASAP. I usually buy mines at mochihill donut in sf japantown, but this looks fun to make. Thank you for the recipe.

@@coleenepagat7715 I know there are recipes that don’t use tofu. However, I have not tried making these donuts without tofu, so I can’t say how it will turn out or how to adjust for it. If you give it a try let me know how it turns out :)

Me and my family just recently tried mochi donuts while on vacation, and let me tell you they are SO good! I'd take one over a normal American donut any day. The ones with matcha icing are my favorite :)

Hi :) I hope you love these Mochi donuts! I have never tried making this recipe without tofu so I am not sure how it will turn out. Yogurt should work but I would recommend using the full fat plain yogurt. If you give it a try let me know how it turns out :)

Aloha , here in Hawaii mochi donuts are really popular these do not taste like mochi at all the texture is off and the glazes were very difficult to make and didn’t taste like the flavors it was fun to make tho as a family activity

Hi Brooke, I don't think using a second egg will work since its a lot runnier than tofu. The dough might be too soft to work with if there is more liquid from the egg.

I have never tried making my own tofu, but that sounds like an awesome idea! Unfortunately, I'm not too sure what the results will be so I cannot say much on how this will affect the taste or texture of the donuts.

I just made these - sooooo delicious!!! But my balls didn't stick together during frying to make a ring. help! Too dry? Not squished together enough? I mean they were fine as "donut holes" but I want the ring shape! Thanks!

Very happy to hear you loved these mochi donuts! Thank you for taking the time to leave your feedback :) When shaping the little balls you have to make sure to stick them together right away because they slowly get less tacky as they sit. That may be your problem. Hope that helps :)

Hi Jenny, no it shouldn't separate :) They get sticky and hold together and when you fry them it helps hold them together more. Hope you love this Mochi donuts recipe :)

There's a mochi donuts place that just opened near me. Its delicious. I just tried this recipe. It's good but a bit heavier than the mochi donut shop..the matcha green icing is too sweet with white chocolate. I matcha with powder sugar glaze & it taste more like matcha. I didn't get to try the Strawberry & hazelnut glaze yet so can't speak for those. Yours came out perfect. Shape wise..mine was super tacky when I tried rolling it into balls. Thx for the idea of making it yourself.
