From scratch Beef onion potstickers recipe:
(You can change the fillings to your liking of course)
1/2 lb ground beef
3 tablespoons water
2 tablespoons soy sauce
1/8 teaspoon white pepper
1/2 teaspoon sugar
1/4 cup chopped green onions
1/4 cup chopped yellow onions.
2 teaspoons chopped ginger
1 tablespoon oil
1 teaspoon sesame oil
1/4 teaspoon salt
1 pack of potstickers/dumpling wrappers
In a mixing bowl, add ground beef, then add water a little bit at a time. Mix in one direction until water is completely absorbed by beef.
Then continue adding the remaining filling ingredients in the order given. Make sure to mix well after adding each ingredient. Let it marinate for at least 15 minutes after all ingredients are added.
Place about a teaspoon filling in the center of the wrapper, brush lightly the edges of the wrapper with water. Fold wrapper over filling into a half moon. Press edges to seal.
Repeat the process with the rest.
Heat a cast iron pan or skillet, add about 1 tablespoon oil. Swirl to grease the bottom. Lay potstickers in the pan. See photo below.
When the bottoms of the potstickers are browned, add enough cold water to cover potstickers half way(about 1/3 cup water for store bought wrappers). Cover and cook until the pan starts to make crackling sound. Remove cover and make sure no more water remains in the pan before removing potstickers.
Remove potstickers carefully from the pan with a spatula.
Tip: If you prefer to make your own wrappers, all you need is all purpose flour and cold water.
1 cup flour + about 1/2 cold water. Make sure to kneed until the dough is smooth. Let it rest for about 30 minutes before making wrappers.
