Shopping List:
Bone-in Ribeye - at least 1 1/2 inches thick
3 tbsp butter
2-3 cloves of garlic
fresh rosemary and thyme
salt, pepper, garlic, onion powder
Doneness Guide:
Rare - 125 degrees
Medium rare - 135
Medium - 145
Medium-well - 150
Well Done - DON'T DO IT lol
Directions:
Preheat your oven to 400 degrees. Allow your steak to come up to room temperature. Place the steak on a plate and season thoroughly while it comes up to room temp. Heat skillet on high heat and add avocado or vegetable oil to the skillet to coat. Place steak into skillet, laying away from you and pressing down for surface area contact and allow the meat to sear for about 90 seconds. Wait until a nice crust develops and then flip the steak. Sear the fat cap/edges and turn heat to medium low. Add butter, herbs and garlic and baste. Place in 400 degree oven for 8-10 mins or until it reaches your desired internal temperature. Allow steak to rest for 8-10 minutes before slicing. (Pull your steak off the heat to rest 5-10 degrees BELOW desired temp.. it will continue to rise a bit as it rests)
