150mL eggs should have more than, not less than 150mL water if the ratio of 1:1.5 to 1:2 are to be kept. I tried adding 1:1.5 water and the eggs came out great.
Yes, 1.5x water is key. Also, the pork takes much longer to cook than the eggs, so I steam the pork by itself for 5 minutes, then add the eggs. I check the egg consistency after 5 minutes, then stop or keep steaming as necessary.

Err...yr steam egg is too dry.If u ovesteam,yr egg will be uneven n rough. Jz in case,if any1 do not hv any measuring cup, here is what u can do,1 egg = 3 eggs of water.Use the egg shell to measure the water.So in regardless of egg size u definately get the right amount of water. Whn u beat the egg,jz be gentle n dont create the bubbles like u r making cake.Jz dont lift d fork too high.N jz add a bit of salt in the egg. N lastly if u don hv d plastic film to cover is ok too,u can insert a chopstick in between d wok n lid .Use medium heat to steam. U can also steam egg while cooking rice using rice cooker.Put in d beaten egg whn the rice water almost dry.

Dear Ah Pa, keep cooking and don't mind all the negative comments like Meg said. We are supposed to have clean hands and clean working surfaces when we cook, so nothing wrong with picking up the dropped meat. Also, we're going to cook the food, not eating raw. I'll do too and it's not disgusting using your hands, the mixing is better. Can you imagine the amount of gloves you're discarding into the environment? Further more, are you going to use gloves to cut fruits and make vegetable salads?
My employer teach me Steam first the meat around 10 minutes then pour the egg to steam again for another 10 minutes haha 😂 the outcome not yummy for me but thy like eat 😀😀😀
Watching this video is like being at the dentist. For something so simple you make it look tedious. Padding the meat down doesn’t have to be an art form and breaking the eggs seems difficult. Of course the eggs going to be yellow, it has egg yolk in it! So was the ratio of eggs to water 1-1.5(as stated) or even amount(as used)?

Mr. Ah Pa, please don't use plastic wrap! It doesn't matter what marketers have told you ... plastic leaches toxic chemicals when exposed to heat. So actually, your beautiful egg custard might not be very healthy. Maybe use a cloth or parchment paper instead ...
This is the second time I see your post. The water ratio is not what you said. You sound inexperienced, not well prepared and lack of confidence but these are all okay. What's not okay is you are too slow, viewers on RU-vid will go for others but the WORST part is you are not hygienic. You should not touch the ingredients with bare hand and don't put back that little bit of meat that have been dropped out !!
