Yummy. One of my favorite noodle dish. We use bigger and wider kway teow in Singapore and is best cooked in charcoal fire to give wok hei and topped it with dehydrated pig fat or choo yeow char and cut chili padi. Each one has own unique way to cook it. Keep it up chef

Looks delicious. My only concern is the shrimps are overcooked for my palate. I would stir-fry the shrimp as you did, but remove them when it's 80% done. Then add it into the dish, just before you add the eggs. Really enjoy your blog !!!

There's a item on Chinese menus here in the US - shrimp in lobster sauce. I think the sauce here is similar or maybe even the same. So great to finally know how to make it. Thank you so much for showing and for little tips like adding sugar with salt to enhance the potency of the salt! I just tried this dish and it was really amazing and like you said very simple. I have 2 things to ask you. firstly, how much of cornflour and water you used for your slurry and secondly how come my egg mixture wasn't smooth like yours? can't see strains of egg... looks grainy... And I really like your channel. I learn at lot from you. TQVM.
Vivien Chan ur egg mixture can only be smooth when the dish is properly starched. Probably u didn’t put enough starch powder? I probably used 2 teaspoons of starch powder mixed with 6 teaspoons of water roughly.

Peaceful Soul yes u can replace with chicken for sure. Just marinate the chicken with some oyster sauce and light soya sauce. Add in some shao xing rice wine if u take alcohol.

Lovely - but I think the prawns may be overdone. Also we need some sambal , fried onions and chopped green chilli in vinegar to complete the dish . Bellisimo ❤️
