Nana Aba,I am in Ghana, I went to the Kaneshie mkt last week and one of the sellers gave me the same method but should be cured at least ovenight - your method is the authentic way as you said. Salty water and salted meat. Thanks.

Yes Amasare, there is the beef version that’s done with beef brisket same way and that’s called beefie. The toolo beefie is cured lamb. Thank you dear 😘🙏🏾❤️

Absolutely loving nanaaba. I'm new to the channel and learning about flavor buildup is super exciting. Thank you for teaching us! FYI how does your enamel cast iron stay so squeaky clean? Unfortunately mine have burnt in marks that I'm unable to scratch off

Thank you for your support 🙏🏽 I try very hard to avoid cooking foods that burn easily in the enameled pots, however, it still happens occasionally. What I do then is soak the pot in soap water for about 1 hour, and use the green side of dish sponge to scrub it. That typically does the job without leaving any scrub marks. If I still have a thin layer of burnt marks, I use Mr clean eraser to complete the cleaning. Hope that helps 🙏🏽

Hi Nana Aba, thanks for sharing - I am confused. I bought mutton and beef today but dont know which recipe to use. All the other recipes are dry cured and some claim theirs is authentic way - I dont know why they do theirs dry or which one is authentic? If I don't add spices to the brine water will the meat taste like the one sold on the Gh mkts?.I have bought from Kaneshie mkt b4 but didn't ask for the recipe. Also can the brining solution be re-used and if so how many times?

All great questions Afi!!! Thank you 🙏🏿😍. You can cure your mutton, beef or both together using the method in this tutorial. Curing meat requires sodium , lots of it, however, there isn’t a hard and fast rule as to whether it should be done with a brine or dry method, so it’s really a matter of choice. Now I know for a certainty, that the one sold in the Kaneshie market and other Local Ghanaian markets use the brine solution without the spices. Not at all to discredit the addition of your favorite spice/spices, as that’s ingenuity and more flavour. As I stated in the video, the original and authentic way of preparing toolo beef is with the strong brine solution, using the specific cut of lamb. Keep in mind there is also the cured beef, which is cured fatty cut of cow meet - beef, eg, brisket (not called toolo beef, rather, “beefie” because, it’s not toolo - sheep/lamb) it can be confusing because both the lamb one and the beef one somehow have the word “beef” in their local name. I’d like you think of it In this way - the Ga people of Ghana call cured meats “beef/beefie” and there are 2 original kinds namely toolo beef (showed in this tutorial) , and beefie (fatty beef cuts) both prepared originally in brine without the spices. Lastly, the brine can be used only once. To conclude, I cannot speak to why my peers call their style authentic or original, I can only speak to mine and stand by it. Thx for ur reply, I did the brine with no spices Thursday night, will drain tonight-I decided to go for the 3 day period. The moment of truth will be when I use the beefie. I didn't have any bay leaf. I tested the salinity of the water by putting a fresh egg in the solution and it floated. Anyway will see tonight. Also I had the butcher cube the brisket, I hope it wouldn't affect the texture of the cured beefie. Thanks, oyiwala doon.

@@NanaabasKitchen Merry Christmas to you. The mutton I brined for abt 7 days remained pink(I waited for 4 more days to make it 7 hoping it get darker but it remained pink). The one I dry cured became dark like toolo beef -I am yet to cook with the solution brined pink toolo beef. It is fresh and pink unlike yours which was dark on the outside. Maybe the temperature was too cold as it is winter. I dont know! But thx

It can be store outside exposed to some sunlight for months Which would even intensify the cured flavor.

I thought toolo is goat meat rather Nana Aba? Because in Ghana they have two types of the cured meat.One is made out of beef and the other is goat meat so yes Audrey you can try with goat meat (maybe) without the skin. I tried this simple recipe with beef though and it was nice.Thanks Nana Aba!

So there is a name in Jamaica. I wonder if you have it in Ghana. Tolo, Cullo I know Tolu is Yoruba. Not sure if that's where it comes from.
