Thank you! Love to learn new skills! I think I would tilt the jar and stack the carrot sticks like a pile of logs and then turn the jar upright, using the tongs to protect my hands.

Wow this video was nice. I remember when I was so young and go to stay with my greatgrand. Her indoor stove was a huge wood burning one but she also had the outdoor kitchen for the summer and the canning seasons. Now she had 11 children so both were usually going all year long but South Carolina had a soft climate most of the year. My job was running back and forth between, canning in the outdoor and waterbath in the indoor. Grand was always in charge shouting orders to everyone. She controlled the chaos with ease. I would run and fetch and pass out glasses of sweet tea and lemonade. And at the end of the day we all sat down to cold sliced ham, potato salad, pickled green beans or what ever could be found. But everyone left with full bellies and a basket full of quality canned food and, I found out later, a mason jar of gramps moonshine. Grand was a little over 5 ft and her hair was as long as she was tall so at the end of the day she would sit in her chair and I would unbraid her hair and brush it out for her then we would climb into bed and she would read to me till I fell asleep. Thank you hun. Something as simple as a pickled carrots video had me remembering some 50 years ago and reminded me of how much I miss those good times.

I use my silicone glove and hold the jar sideways and then slide the carrots in and stack them wonderfully, just like with fry cut potatoes.

I lay the jar down or tilt it so the pickles stack against the sidewall. Then stand the jar up as when they stay in place to continue.

Tip the jar on it's side and place them in long way as long as they are sized to respect the head space.

I would lay the glass down on its side and then I would stack the carrot sticks like you stack firewood, then lift the glass up and pour the liquid on and continue as usual

Possibly put the jar on its side or at a slant so that the gravity would help them Nestle together more as you're putting the Spears in the jar.

I am in Pickle Hell right now! it's not a bad place to be but the amounts and the different produce that is wanted/requested to be pickled 🤯 it gets a little much some weeks. I never just do carrots, they are usually in my "mix pickle jar" but they are good 😋 I pickled Daikon this week, really good - if someone shows me another green bean, I am done🤯 Wish you well, hope summer is going well❤

Thanks for posting this video, I want to try canning some this week. I do have a question about them being soft. I heard somewhere or maybe I read it ??? about using grape leaves or bay leaves in the jar with pickles to help them retain their crunch. Something about the "tannin" (sp) in the leaves helps. Have you ever heard of this??? Thanks for being a wonderful inspiration, I appreciate all of your videos!

Looks delish! I need to find a recipe for dilled green beans. I used a mix but it was sweet. I’d rather have salty so I can use these as a garnish for bloody Mary’s!

I made these last week! Did them with Mexican spices. I only cut the sugar a little bit and it really didn’t taste all that sweet. The process for that recipe seemed a lot safer to me than most of the others I was seeing around the internet

My quilter's eyes were drawn to the mat- did you make it? Regarding the ForJars lids- I was under the impression that they had the prominent center "button" like the old Ball lids did- they don't. I thought they'd PING when they sealed- they don't. I've heard they were thick and heavier than Ball lids- they're not. I weighed them- they each weigh 6 grams. But they all sealed.

They ping, but its different, I show the button on almost every video, when I weighed them they were the same grams as every other lid I had available. I'm sorry if you feel misled, I tried to cover all the information. Their sealing is no surprise, they are great lids. I hope you enjoy them as much as I do

Ohh, I want to make!!!! I had an issue last week with canned chicken ..I canned outside and the temp was too big of a variation and I had a few lid fails...so we ate chicken!!!

Did the math...$1.42 for a lb. of beans. Gave me 5 pints. $0.28 cents a jar. So worth it . Did kidney beans and small red beans. Navy beans after work tomorrow. Oh yes, there will be beans. You've created a monster. I'm a canning fool now bc you gave me the confidence to try. Can I can small red and navy beans together? Same size it looks like.

When I water bath these do I add time for my altitude? I’m at 1.650. Is that true for all water bath canning?

Leisa would using a funnel allow you to fill the jars getting things to sit more vertically ? Tried it seemed to work for me.

I purchased a steam canner but I’m not able to can because my back is out and now have to have a hip replacement too. Standing for long is an issue. Can’t wait until I can can again.

I’ve had both hips replaced can’t always stand for long periods. I sit while I prep the food. If I’m hurting that day I only prep and process the next day. I hope what I do helps. May you recover quickly.

Do you have a stool that isn't painful to use? Some things you can prep at a table sitting down. If I'm feeling dizzy from my popped neck disk or fibro, I use a stool or some things can be done at the table like preparing my green beans to pressure can after rinsing. Blanch then take a break. Take breaks between steps.

Lay jars on their side so they lay flat when inserted? I’d try that, as if doing green beans or cuke spears. The recipe calls for 1 inch headspace on solids and 1/2 inch headspace on liquid. Looks like you may have been short on yr liquid and over on yr solids (inverted). Tfs.

I just experienced that hissing sound and the bubbling action canning some green beans. This is the first time it's happened, but like you said I had the air conditioning on and I rushed taking the lid off. There wasn't a lot of siphoning, but there was some. I assume they're ok?

I would put the carrots in get them all in the jar didn't add mustard seed that way you can hold the jar side blazer however you need to get your carrots all in the junk well in the jar to fill the jar completely up

I have had pickled carrots before and have not been real thrilled but I know from looking at the stuff in this that it was a different recipe do you just eat them too much on do you use them in any recipes or put them on or in tacos or anything like that or what. The bit of sugar in this I don't think would bother me how sweet do you feel these are from one diabetic to another

I agree with the texture thing. Made pickles for first time using a mix and they tasted ok but the texture was like mush. They were nasty, we couldn’t eat them. So disappointing.

Liesa, this way off topic, but I've scoured all canning videos and the internet and I can't get a answer to my question. Will you help me? I canned 35 pints of pork butt, following all the steps. I got them out of the canner and I had 6 failed lids. The rules are leave all jars alone for at least 12 hrs. IS IT SAFE TO LEAVE CANNED MEAT OUT THAT LONG ONLY TO FIND OUT ABOUT THE UNSEALED LIDS? I intend to reprocess them, but is it safe????

Yes it is safe, it takes longer than that for it to cool down which is why they say you gave 24 hours to reprocess or refrigerate

It sounds crazy, but YES according to the National Center For Home Food Preservation, jars that don’t seal are ok to be reprocessed for up to 24 hours after the processing attempt.
