How to Smoke Beef Ribs in a Weber Kettle

Want to learn how to smoke beef ribs? In this video i'm going to show you step by step how to smoke beef ribs in a Weber Kettle!
Now you can use this method and adapt the temperature guides to suit other smokers too!
Smoked beef ribs are like brisket on a stick! They are super tasty, tender and juicy too! Beef ribs are sure to impress any BBQ lover!
If you are new to BBQ, learning how to smoke beef ribs is a great starting point! Beef ribs are very forgiving, they don't require much attention and are so tasty!
They key to great beef ribs when learning how to smoke beef ribs is understanding probe tenderness. They might feel alright at the 185F/85c internal mark, but trust me, you'll notice the difference once you start getting to the 200F-205F/93c-96c internal mark. So my advice is to be patient and really get to understand what the right probe tenderness is. Temperature is a great guide, however when it comes to things like pulled pork, brisket and ribs, probe tenderness is key!

Hey Aaron, I have always used your videos as the first point of reference for any webber cook and have followed multiple of your videos. I finally got round to giving the beef short rib a go. 2 racks consisting of 4 ribs each on the webber following this technique turned out perfectly. 12 hour cook in total with no wrap it was absolutely bang on.. Keep the videos coming and I appreciate your work. 😊

Thanks for this video. Just had a pretty decent crack at my first set of ribs following this video. I didn’t have a slow and sear kit so I used snake method with the charcoal. Kept the vent opposite the heat source. On the minimal number of occasions I checked under the hood I turned the big end of the ribs towards the heat point. Bloody hell the temp management had me knackered. Dropped a little, opened vents a wee bit, rocket up like mad, close them back a bit. Got a good flavour and good bark. Some sections a little less tender than others. I found this video the most helpful of about 4-5 I watched and I managed to get my hands on the same brand of ribs too. Thanks fella. I’ll be getting a slow and sear kit ASAP

Mate you are a legend I just bought my webber master touch pro last week I follow you on here and I have used your tips 3 times so far you have never failed me to date and I just did some beef short ribs from austral meats and surely enough they turned out succulent juicy and tended to the point they were hard to pick up with out falling apart meat come of the bone perfectly the only thing I did diferent was use lanes southbound tangy mustard bbq sauce sparingly as a binder for my rub of the four saucemans the beef rub I have some friends over one who said that my ribs where better than Maggie Beers up in the boarrossa so please keep up the good work sharing your hints and tips and helping us newbies to bbq perfection

Great video. Was so disappointed at my first attempt with beef ribs on the Weber. Had a stall that went forever and took them off before they were done. Would be great if you did a video on cooking stall.

My advice is just either let it ride, increase temp slightly or wrap. Always try get meat on earlier than you think too 😀

Have you heard much about the only fire unit? I bought it as it seemed almost the same as the slow n sear but cheaper, but I can’t seem to keep the temperature stable. It just keeps rising and rising, all the way to the mid 300s. Im back to using the snake and a water pan. Any ideas what’s going wrong? Amazon has 100s of reviews on it with people happy with it

Thanks. I have ribs smoking as I type this. I've tried smoking in my Webber loads of times. I find that I am continuously having to adjust the openings to get the ambient temp to stay where I want it. Am I doing something wrong?

Hello, i was wondering if you have done any videos on how to control temps? i live in an area where it can be very windy, then so still that my coals just cool off, i have not been able to find a video on the subject as all i find talk about the amount of wood or coals, none seem to mention real world windy/ calm conditions. Any help would be appreciated.

Nice brother, I’m doing some beef baby back ribs today, can’t wait, also can you do a vid where you show us your bbq’s/smokers, your knives and all your rubs and how you store them, if you’re anything like me I reckon I have around 25 rubs on the go atm and luckily I’ve found a supplier of herbs n spices that sells them in 1-5kg bags and now I’ve started making my own rubs as well, don’t even get me started on all the different types of bbq sauces, brines and injections I have too, it’s a bloody obsession, you got me started on the Dalstrong knives and now I can’t stop lol, I now have around 12 bbq’s n smokers and love em all, just got my first sns grill and all the accessories, I need to ask how long has your channel been going on RU-vid and is it worth doing, is it full time for you or do you still work as well, thanks mate love your work

Hey mate I’ve done a bbq walkthrough and knife video in the past. My rubs are just stored in a cook dark place in my pantry too :) channel been going for almost 3 years. It’s a lot of work behind the scenes ppl don’t see mate. It’s full time for me which is easier now but very challenging when doing it on side of family n full time job duties.

@@blueenglishstaffybreeder6956 around 2.5 of the years. It’s a hard one mate, some people have been doing it much longer than me and still don’t do it full time. Others have success in much less time too. It’s more about studying how RU-vid works and finding a balanced schedule that works for you. Don’t let it consume you or you won’t enjoy it. It’s been worthwhile in my experience.

It heats the wood up so when you throw it in the firebox it ignites instantly so there’s no fowl smoke

Because its a tough cut due to it being a well used muscle so it needs to be Cooked lo n slow to tenderise it

It’s a completely different style of cooking. This is about breaking down the connective tissue and rendering the fat to desired tenderness.
