I'm a Black American and my 94 yo grandmother has said this all my life about vinegar. Vinegar for maintaining weight and blood pressure. Who am I to doubt her - she is 94 and counting.

This makes so much sense! Being an American of Mexican descent who has lived in Mexico City, I have seen footage of the 1980s earthquake that devastated Mexico City & what you’ll notice is that people were very slim, despite living off of a diet very high in carbs (corn). The interesting thing is it is a strong custom to add lime to everything in Mexico… tacos, soups, etc. It’s also common to serve meals with veggies (cauliflower, carrots & jalapeños) cured in vinegar. It wasn’t until the U.S. introduced fast food, soda and all of their processed junk that Mexico developed an obesity epidemic! Wow. Mind blown.

Sorry about that! All of our “scientific advances” haven’t been as good as we’d hoped. Apparently the same thing happened in Costa Rica, where they used to have one of the world’s longest lifespans. On the same token, American Scientists, such as Dr. Fung, are now helping to undo the damage! So thankful for guys like him.

So interesting! I lived in Peru for a while. When people there want to lose weight, they would always squeeze half a lemon or lime onto their rice (a staple food), saying it helped "burn the calories".

One of the things that is so notable about many of Dr. Fung's videos is how it confirms the wisdom of many long held cultural dietary practices. The fact that vinegar has this ability to blunt the glucose spiking effects of dietary carbs and that varied cultures have *independently* developed means to incorporate vinegar in their cooking illustrates how, despite these cultures existing millennia before the emergence of modern science, they were ahead of their time. It should teach us that our tendency to dismiss the insights of the past is done at our peril.

I TRULY believe that we should have more regards to the "traditions" or practices of the past (before "science" became a new god). It shows that human beings and certain cultures already looked at ways to address healthy living with food...something that "science" now only barely mentions but still promote the food "pyramid/plate" way. It keeps this system going because the food industry as we know it could be adversely affected. In my view, they are all part of the same (evil, yes evil) system.

I love anything pickled, vinegar, dill pickles, cabbage, etc. I do 3 day fasts and took Dr. Fung's advice on day 2 when you have some hunger have some pickle juice, I do that and a cup of black coffee and day 3 I have no hunger at all.

Also fasting costs nothing and saves you money. Most people don't understand how easy and beneficial it is. They think it's hard, it's so simple and natural.

@@Jjj6212 Easier to fast than carry around excess weight. I've done 18:6 IF as well as 3, 5, 10 and 14 day water fasts for since 2018 due to the Dr. Fung's advice. It's very liberating. Once your body adjusts, eating multiple times a day becomes an unappealing nuisance. Once 410 pounds, I now weigh 140. My doctor can't believe the change. I also added fermented foods to my diet last year and ACV before meal(s) about six months ago. Started working out in 2021. I feel like I'm reverse aging.

In Italy, the salad is last and has vinegar on it. The salad has fermented peppers. The pickled vegetables are eaten as an appetizer The spaghetti is eaten with meat and sauce. The bread us eaten with olive oil, vinegar and salt.

Salad hasn't always fermented peppers. Oil, fresh lemon juice or, in summer, vinegar, and salt are the only stable dressing ingredients. Spaghetti is eaten in many different ways, same goes for bread. Foreigners should avert from making claims about other cultures, and begin statements with "as far as I've seen"

I'd like to point out. I started practicing drinking lemon juice right before every meal that has carbs. I put 3 Table spoons of 100 percent lemon juice in 6 ounces of water and drink it right before consuming my meal. After a week, I started noticing that I one, feel very satisfied after eating my meal and don't want seconds at all and two I weighed myself 10 days after starting and I starting losing weight even faster. I must confess that I go to the gym 3 times a week and do heavy heavy lifting and walk 3 miles 4 days a week and I was already losing weight, but I went from losing 3 lbs per week to 8 lbs. I lost 8 lbs in 10 days and I'm pretty positive that it's due to the lemon juice. Like he said it's prob not allowing for all of the carbs to be digested and the glucose spike being minimized. I have type 2 diabetes. I also at the very same time started practicing not eating naked carbs, he talks about this in one of his other videos. Before I eat carbs, he suggests that you eat a little bit of protein 10 min before you eat your meal or any carbs. I don't get to do it every time, but I do it quite a bit. I'll eat a piece of low fat cheese or 4 ounces of greek yogurt 10 min before my meal, or sometimes I'll mix 15 grams of protein worth of whey in 4 ounces of water and drink that before my meals. Both these things in combination has caused me to start losing pretty much 50% more when I check in the scale. I just weight myself again the day before yesterday only 5 days had pasted and I had lost 3.7 lbs, in just 5 days. I am NOT on a caloric deficit. I'm eating my maintenance. High protein diet. The only different factors were those two things. Drinking the lemon juice right before my meals and eating a small amount of protein BEFORE eating the carbs that are in my meal. Try it and you will feel amazed at the results. Obviously if you're eating more than your caloric needs you may not see that significant of a result. Also if you're not exercising like I am, if you do see results they may not be as dramatic as mine. But if you're eating your maintenance or on a caloric deficit and you practice both these things, you may see even better results like I am experiencing.

Thank you for sharing this! I have been doing IF of varying lengths with no results. I am pre-diabetic, so I think that makes it a bit more difficult, but seeing you as a T2 and still losing weight is inspiring. I am trying to eat better and maximize some weight loss with hacks such as these. I wanted to ask Dr. Fung if he felt we needed to put the lemon juice or ACV actually on the food, or if we could do as you do and drink it before a meal. I am going to try this. Thank you for all your help here.

I am very close to how you were but a lil smaller but I am so sick people making comments to me like I'm huge or like you said having shorts that used to be so cute on me and now I can't even find a pair to fit me. I used to love shopping now I don't even want to go to the store and if I do I pick the biggest size don't even try it on and deal with it. I went from size 5 to size idk because I don't even want to know the real number. I hate looking at pics of myself now or me before. thank you for your video it's time to make a change.

Same here.i have never been skinny, always with muscle. I lost weight after two kids and looked great, then last year gained weight after an accident and concussion. Have been so dizzy and have lots of headaches,so I was put on meds that got me to gain 20+ pounds... Also , with meds making me nauseous and being nauseous from walking, standing etc i relief on some carbs which i didn't do before. I swelled up like a balloon and was itching my skin constantly. I felt like my skin was about to pop which the nurse said meant i was allergic. After they switched the meds, it didn't get much better for a good while plus side effects from the new meds. I started building up tolerance to fast for long periods of time, eating a spoonful of plain peanut butter to hold me over when it was hard. I eat cabbage and meats, small amounts. Acv in water. Thank God the swelling and this weight is starting to slowly go away. I've lost a few pounds, i feel a bit lighter. I have ways to go but i refuse to give up. I've been depressed over my pain and weight for a long time. You and i can do it. Let's just keep going. I ve done it before and i can do it again with God's help. Before meals i also say a blessing and all God to let me have it for my health and not the extra weight . Good luck! I hope soon we are a bunch of lbs lighter!

​@@Chinyerefyin Italy they serve olive oil with vinegar as a side with bread. And then at end of meal usually we would have a veg salad with olive oil and vinegar salad. I don't think they drink it as much it is part of the diet. The olive oil is fresh and amazing we shipped a bunch back.

Thank you, Dr. Fung. You shed a lot of light of why Asian diet eat a lot of carbohydrate but maintain their skinny weight. Chinese use a lot of vinegar in their cooking, Korean use fermented like kimchi, Vietnamese use fish sauce (fermented fish), Japanese soak Sushi rice in vinegar. You've done it again; this info is very valuable for us who want to lose weight. Thank you so much.

@@thoang101 You can't break laws of energy. Asian or not. If you eat more than you can use, you will gain weight. If you eat less, you will lose weight. There is no way around this. I truly don't understand it when people think some hack will magically stop the basic laws of energy from applying to them.

In Greek food culture we always use vinegar or lemon juice in our salads and the best taste of bread is the one when you 'dive' your bread into the oil and acidity of your choice in salad bowl. The oil, mixed, in most of the cases, with vinegar and the juices from the vegetables in the salad are giving superb taste to bread. Another way of eating bread in Greece is to have a small bowl with mixed olive oil and vinegar to dip your bread in it.

Yum. Same in Albania! I love the oil and vinegar at the bottom of the salad bowl. It’s flavored from the tomatoes, cucumbers and peppers. We also eat yogurt with our bread.

Dr. Fung, Thank you for all the good work you do for your patients. Under your guidance thru your books and videos I have lost 82 lbs since July 2021. I was on U-500 insulin 3x per day at 30 units. A1C at times 10+. Now A1C 6.1 and my doctor has told me to stop the U-100 that I was most recently on. I do OMAD and have done 3 7 day fasts in the past year. I was a T-2 for 18 years.

@@bethfraser7518 Thank you Beth. Good luck on your health journey too. I just completed a 9 day fast about 3 weeks ago. Never hungry during it as I did not have carbs or sugar in my system. I freaked out on Day 8 as my glucose was at 55. I took 2 sugar pills although I did not have any hypoglycemics symptoms. I have later found out that when fully burning ketones low blood sugar is normal.

Simple practical ways: (i) Squeeze lemon juice over your plate of food or salad greens, (ii) put a table spoon of apple cider vinegar into a glass of water and drink it after eating your meals. I do that so hopefully suggestions are helpful for you. God Bless.

You can also drink lemon water (a glass of water with 1/4 a lemon squeezed in) instead of apple cider vinegar, which is damaging to the tooth enamel.

That made a lot of sense. I started my diet two years ago, I always added a teaspoon of apple cider vinegar to a glass of water before every meal. I lost thirty pounds in the first three months! I stopped doing that after I reached my goal of fitting into my pants back in my college days:)

I don’t get it. If putting vinegar in water worked, then after you got to your goal and stopped, you should have gained the weight back. So clearly it was something other than the vinegar.

This makes a lot of sense. I never understood why vinegar works until now. I’m a home brewer. Enzymes were discovered in brewing. The alpha and beta amalyze in malt breaks down the starch into sugars in the mash. Everyone should see this, it’s quite amazing to watch when using other starches in the mash. They go from a thick gruel to a consistency of water in an instant. Anyhow, I was able to lose 50 lbs and still have a beer or two with dinner most nights, or while golfing, doing a keto diet. I also do 16:8 IF-super easy once you are keto adapted. Since the finished beer is about pH of 4-5, that probably does aid somewhat in digestion. I do not drink a lot, but was able to on keto/low carb with IF and still lose weight. With other diets, I always gave up beer, but eventually have one and go off the diet. This is working great for me and my doctor thinks keto is “crazy” but tells me to “keep doing what I’m doing” because my blood tests now are much better than before.

@@sircharles7323 In general, ales have a slightly lower pH than lagers; typical values for ale are 4.0-4.5, for lager 4.4-4.7. Each yeast strain, however, has its own characteristics. They key is to stick with just 1 or 2 servings. Also, craft beer or homebrew is best since the yeast are typically not filtered out (as it is in many commercial beers). The yeast is B vitamins, basically.

if your OMAD stops working, switch it up to alternating lunch and dinner (one day lunch, next day dinner) -0 this gives you a 16hrs/30hrs fasting schedule and will be enough of a shakeup to keep your body guessing

Thanks for explaining this so well. I drink water with lemon and about a month or so ago I started adding about a TBSP of ACV to drink while I eat my OMAD meal. Now I understand more clearly. This might explain why the Maltese diet of bread + capers + olive oil doesn't result in diabetes for the majority. Olive oil buffers the carbs plus the vinegar in the capers blocks the amylase.

I have tried many diets and lap band only to gain more. I am new to fasting. Started 6 days ago. No hypoglycaemia in 18-19 hr fast. Down 4 lbs so far. So grateful for your help. Thank you so much for your insight and encouragement 😘❤️🙏🏻 Update sept 2022 I’m down 17 lbs. not moving fast but at least it’s heading in the right direction. Hypoglycaemia is a thing if the past which I am very grateful. I was omitted wheat and processed sugar for 3 moths and was fasting 22 hrs most if the time. I was not losing any weight and decided I needed to find something a little less ridged. So I’m now 19 hr fast and feeling much better and weight is starting to move again. @@sl4983 Hello. All week I eat at 4.45am just after I wake up. Normally muesli with soya milk. then I eat nothing to lunch time at 12, which is a cheese or smoked sausage or fish salad. Then I won't eat to the next morning. Friday night I have a few beers and a kebab And then Saturday and Sunday I have a large one meal each day. Which is high In protein and low in carbs. I don't care if I eat fat, I feel fuller if I do. I just cut carbs down to a minimum and have a fast between my meals. At first I found it hard but now my body is getting used to it because I've made friends with hunger. It's more natural then being full all the time.

Fascinating! I knew there had to be more to it than "Japanese stop eating at 80% full" and "balanced plates" sort of mentality. We as a society used to eat TONS of pickled stuff because well lack of refrigeration. My parents talk about leaving tuna sandwiches, bologna sandwiches 'out' as kids. They didn't have 'ice packs' in their lunch boxes which tells me something def changed in gut microbiomes. There was also almost no allergies back then. (these are observations of my own) great video Dr Fung! :)

Thanks for sharing. The chubbyemu video where the patient would leave out all food for long times and never had a problem. Then ate the suspect romaine that had the funky bad bacteria and almost died. Yep food has changed. If that person can leave a burger out for hours and never have a problem. Most whole non-processed meat doest have preservatives. And they did just fine. When all the stuff has preservatives. Then the food chain is so polluted. Dirty processing plants. To dirty plants getting sprayed with rotten manure. Or rotten rinse water. I smell it on produce. I'm going organic, but that's not great either. Need to live at trusted farmers markets for the summer.

@@scoobtoober2975 Actually here in CA salmonella outbreaks are almost always, without fail ORGANIC PRODUCE. Seriously. It's weird. I think over antibiotic usage and being 'too clean' has caused the prevalence of food allergies. My parents talk about NO peanut allergies, asthma, etc as kids. Now it's everywhere along with celiac but we spray the hell out of our food with glysophate too. Terrible.

Thank you for posting. I have been researching Microbiome and yes fermenting foods help with digesting and helps balance bacteria which helps with cravings energy. I make sushi all the time but I don't use sushi vinegar I use Braggs because of the mother and I add a little monk sugar without heating the vinegar not to kill thr bacteria. Taste the same but healthier

This was so enlightening for me. Thank you for the video. I’m a high carb eater. Vegetarian. I feel great. I’m not overweight, but somehow began to wonder if I’m doing “something wrong”, because of all the low carb talk I hear. Turns out, I eat a salad every day for years with my one meal and I put vinegar on it. I also drink lemon water all day. I was doing this because I like tart tasting things. I had no idea of the benefits.

That's make three of us!! I'm surprised I still have good teeth. I've loved tart items since childhood. I remember my mom would use two lemons to make a pitcher of lemonade. I would use one lemon or two lines to make ONE glass of lemonade. One glass!!! Sometimes I would squeeze lemon/like unto my tongue and sprinkle salt on top! I also always found a way to add tart items like vinegar, pickles, relish, vinegrette etc to food.... to give a better flavour. And don't talk about every and any tart/sour fruit. Note: Sour here doesn't mean foul. It's the opposite of sweet

We were taught in biology at school about amylase working only in the mouth, and that when you swallowed it the stomach acid stopped the digestion process. The idea, then, was that you WANT to digest your food (rather than have it "not count" because you're over-eating it). That was the explanation for the rule that you should chew your food thoroughly (eg 30 times). We seem to have lost a LOT of knowledge of this kind in the constant search for medications to fix things. Basic, well known biology.

Dr Fung, you are the best! Just tested this theory with my rice diet. Lunch was 1cup of rice with one cup of fruit. One and half hrs later Blood sugar was 164. For dinner I Drank three Tbsp of “green bottle”lemon juice with 27 oz of water with one cup of rice and my blood sugar 1.5 hrs later was 107!!! This is amazing. Try no rice (worse carb to have because of glycemic index) and no fruit (fructose) substitute for protein and fiber filled veggie like green beans with butter. Your blood sugars will drop dramatically. Just an experiment. ☺️

I sometimes watch a vegan RU-vidr. She puts lemon juice into everything after it's finished. She is very slim. I must check more into this. I already knew about not eating naked carbs but not about eating the carbs last. I do like sushi but haven't had it since I started lowering my carbs.
