as Lebanese I have several recipes for hummus.. this one you did is called mtabal hummus cause you added tahini we have it with bbq chicken or with any thing it is always on the menu. how ever, I do something called msabaha you don't make a puree of them you just boil the hummus then smash garlic, season with salt pepper and some spice, add extra virgin olive oil and tomatoes put the mixture together and mix by hand and press on the hummus... enjoy!

Lebanese food is A1. I LOVE Greek but Lebanese right there too. I'm neither Leb... or Greek but love the food and ppl. I study ppl , culture and food for fun as a hobby and find that we all are more alike than different, i mean most cultures or groups have flat breads, naan is my fav, greens, spices ect that are very similar just different because of the ingredients available. its crazy if you think about how much ppl are the same 😊. I dont know the name of the different hummus you speak of but i have had it and maybe because i first experience hummus in Arabic restaurants in the Detroit area im bias in that way that its better (Lebanese), but the Greeks have that sort of hummus too and its also really good. just slightly different almost unnoticeable.

God-Mode Incarnate sorry if I may have offered not being Greek but it was a traditional Greek restaurant I went to in Detroit area that had it and it looked and tastes like hummus to me but it was a different name I can’t remember. My point though is that we are all similar in our foods just region or techniques that very slightly to make a seemingly Hugh difference in the outcome. Hey bro, I may have been Greek in a past life because that’s my #1 food (overall) but some similar or comparable dishes I may fancy is all.

I made a few batches of hummus recently. By cooking the chickpeas longer (2 hours or more) there is no need to peel them afterwards, while still having a smooth result. Also I don't let them cool down at all and blend them as hot as possible for the best result. Personally I also add a tablespoon of sugar - perhaps not traditional but very tasty!

Ooh la la! Life's stale without Hummus. 😄 It's a must in my diet. I have it three times a month at least. Homemade, too. 😊👌🏻 I add a quarter cup yogurt (not recommended, I know because it has lemon in it but I love it🙈) as I cook chickpeas with about three cherry peppers (pimento). Makes the broth (and entire kitchen) aromatic and mouthwatering. 😍

If you want to bring a slight twist to the recipe, add 1/2 Cup of hung Yogurt (you have to remove all the water from the Yogurt: put yogurt in a thin cloth, tie it into a tight ball, squeeze out all the water and hang this for a couple of hours).

@QAOSbringer Greek olive oil which is you know.....made in Greece from Greek variety olives since Ancient times. It's called Greek Yogurt because the method of making this Yogurt which is by straining it, is native to Greece (στραγγιστό γιαούρτι). The first evidence of Yogurt was in Ancient Greece when it was called οξύγαλα (oxygala). The word Yogurt is borrowed etymology from Turkish. I've never heard anyone that is Greek refer to Tahini, Hummus, Spoon or Fork as Greek. I do know the Cyprus for years has trying to lay a regional claim to Hummus but not Greece.

The traditional Greek Yogurt is called STRAGGISTO, which means Strained! In Antiquity the Greeks used the word OXYGALA for Yogurt. Yogurt is a turkic word imposed on the Greeks & not the original words they used for their Native Yogurts! 🇬🇷👍🏻

There is no Greek Fork or Greek Spoon. As for Greek "Hummus", it depends what you mean, Greeks make a Fave Dip as well with the Santorini Fava Split Dried Fava bean that English Speaking Greeks may call Greek Hummus for simplicity sake. There are more traditional versions as well in Greece. They have too many ways of making it! 😃 Greek Cuisine is the Best in the World! It is rated by FoodAtlas at #2 one single decimal point behind Italia. It has everything from Seafood, Pasta, Meat Dishes (including Pork which Muslims don’t eat), Vegetarian Dishes, Coffee Culture, Dips, Soups, Salads, etc! 🇬🇷👍🏻

You cant break the sesame seeds at home. Tahini is not peanut butter. Plus it doesn't have oil and salt. It's one ingredient. Sesame seeds. You dont need to make it at home as long as the box writes one and only one ingredient. Unfortunately we cannot make everything at home. 😊 An expensive blender is not anywhere near a factory machine.

To make the hummus perfect you should peel the chickpeas, the peel gives it a bitter unfavorable taste.

He's right actually. It will taste better if the skins are removed. My advice - make a big batch once a month cause hummus freezes well.

.you can skip that by buying a small kind...like the bulgarian kind then the skin almost completely dissolve while you cook it/ also i think that its better to let them cool before you put them in the mixer. texture wise and also coliform wise

I find no bitter taste from the skins, however removing them will give you a very creamy texture, well worth the extra effort!

Replace tahini with peanut butter if you don't have or can't find tahini, and it tastes really good with peanut butter.

LOL yeah. I only make this once a month for that reason. Luckily this stuff freezes well so I make a large 1kg batch and freeze into weekly portions. It's not horrible if the skins are left on but it does taste better when the skins are removed.

yes. we usually eat it as a side dish , its has a lot of protein. I use it in my salad, wraps, side dish, dipping my tortillas chips ... all kinds of uses! its delicious 😊

He is just presenting a recipe he is not claming hummus as greek ,because its not of course. Its not a traditional dish here in Greece most people dont even know what it is and if they do, they only know it as an arabic dip.
