It's called the "bark" like bark on a tree (not crust) on the rib. It's created from a rub of different seasonings that they rub into the meat before smoking it. It caramelizes during cooking, creating the bark. The pro BBQ'ers all have their own signature rubs they create and use. The beef you dipped in the sauce is called brisket. It's one of the most popular BBQ meats. I'm a Texan who is around a lot of BBQ, and as a die hard carnivore, I never get tired of it! I'm glad you found a top quality BBQ place to try it for your first time.... YAY!

Birria tacos is a famous Mexican dish and the broth you used is called consomé it’s basically the juice the meat was cooked in 🔥🔥

Sugar, the crust on your meat is called bark...best part of bbq...If you only like the bark(that's me) ask for burnt ends....the cookies in your pudding are vanilla waffers...Love your videos....Also you have to go to Tennessee and The Carolinas for different types of bbq

Rafael I loved that you were here in Texas, definitely the best meat dishes in the country. Btw, birria is a Mexican meat stew from Jalisco, Mexico usually made with goat or beef and adobo, goat is more traditional where my parents are from in Jalisco. It's the best!

I’m so glad you are finally trying southern bbq, texas goes crazy with their portion sizes, beef ribs are sooooo so good! Brisket and sausage too! Smoked bbq is the best and so tender and flavorful. Also love bread with butter. also wondering if what you tried from the first place was cowboy beans You need to try the Mexican food in texas next! Especially by the border. They have filled churros and there’s a Mexican burger that has sausage and it’s sooooo good, lot of their food has so many layers and flavors and creativity, just be prepared for actual spicy food

We so need more BBQ in the uk, we only really have Bodeans in london but i doubt its anywhere nearly as good as this. 😢

Love this!! I live in Georgia (southeast US) and I can confirm southern hospitality is real (but not for everyone) and the food is good. People think of American food as burgers and pizza and whatnot but when you look at each region you get so much MORE- chicken and waffles, lobster bisque, Tex mex, etc

By the look of the food we can assume its probably pretty good food, but since we can't taste through the screen, we dont know for sure. Love this video! So happy you went to Dallas! I am a southerner and i can tell you there's nothing in this world like southern hospitality! You should think about visiting Memphis Tennessee. Beale street in particular. Not only is there AMAZING BBQ and other foods but music as well.

I'm so glad you came to Texas! Welcome! The burnt part of the meat is called burnt ends, a lot of people will get just the burnt ends, usually off the brisket. BBQ is my favorite, but all that grease can give you heartburn. Love your videos 🩵🩵🩵

From what I can tell you ask for burnt ends. Yes real Texas chili doesn't have beans and you said the phoreto was the only pho till the second tray. The birria consomme and tacos, The flan is like caramel custard. All the food looks very delicious. 😋🤤
