A little tip for crinkle cookies-if you roll them in granulated sugar before the powder sugar, it will keep that powder sugar from melting into the cookies. It’ll give you perfect crinkles every time!
You might want to check your oven to make sure the temperature is accurate to what you are setting it to it could explain some of the trouble you were having with you cookies baking up.
This. I was having similar issues with my oven when my igniter was on its way out. My oven wasn't getting quite hot enough. Cookies cooked flat because the oven wasn't hot enough to get a "skin" to hold their shape, and cookies and bread ended up pale. It could explain all of his issues this episode.
I had another recipe for a double chocolate caramel cookie that uses Rolos in the center. That might be a better idea to contain both the chocolate and the caramel!
8:49 I really don't think lemon curd should have been baked but rather the cookies should have been removed from the oven, immediately thumbprinted and then filled with the curd. Also, looks like the cookie was more of a crinkle cookie so probably something off with the temperature or some other problem.
One trick that I learned is when baking anything that calls for lemon/orange zest and sugar you should mix them in a food processor together. It extracts all those citrusy oils and infuses it straight into the sugar. It's like what you did when you massaged the lemon zest into the sugar but way more efficient.
I tried that oven trick with underripe bananas once in banana bread, and it definitely could have been in my head, but i felt that the banana flavor wasnt as present as when i used bananas that were already ripe
Citrus is in season in some places in winter so it's kind of a staple. In olden days, a box of lemons or oranges from Florida or California would be the highlight of Christmas as a damn fine gift for your business partner.

I make an icebox cookie with Twinnings Earl Gray tea in the dough, and a little lemon zest...they're dainty (could be made stronger) and really nice compared to some of the super sweet cookies this time of year.
For the lemon cookies I suggest you do two changes to the recipe: 1) add a pinch of turmeric to the cookie dough to make it bright and yellow (or food colouring), and 2) roll the balls in powdered sugar twice. Roll, rest for 10min and roll again. It gives you a thicker sugar coat. Together, these effects should give you a decent contrast between crust color (white) and dough color (yellow). 😉
As a pro baker who is excessively lazy with making things for myself, my go-to cookie is shortbread with tea in it. Usually I use earl grey. It keeps the simple beauty of shortbread but infuses it with any variety of flavors, which in turn still pairs well with a beverage. Also it makes the house smell amazing.

The lemon curd cookies are essentially Engelsaugen, a type of cookie popular in and around Germany. Usually, the get filled with strawberry/raspberry jam and are supposed to be this pale. I personally prefer Linzer though when it comes to jam filled cookies.

I don’t know if this is a recipe thing but all of these cookie required melted butter? Even the shortbread? That seems strange to me because creaming the butter/sugar is usually what gives a cookie it’s texture and some of its lift in the oven. I could understand the brown butter being a flavor component but I’m surprised these all have melted butter, which is going to create a much different texture Edit:ok so the chai cookies did have creamed butter kinda.
In my experience, those types of (lemon) cookies always seem to be pale. They have to reach damn near Sahara levels of dryness to get any color on them.
