No way - your tomato ratio is exactly perfect in relationship to the bacon. The tomato provides that cool, crispy but soft, gently acidic bite to balance the rich, salty bacon. BLT masterpiece.

@@bumm1n377 Not really HARD but it can be stressful due to how much is out of your own hands like fermentation rate. Between the King Arthur channel and Weismanns video on it, you can have a good easy start i'd say and every loaf for the first year is better than the last

I fell in love with beef bacon in the Middle East and Africa, but I have this strange feeling even the best examples there weren't close to this. Great experiment. The BLT, with proper ingredients, is possibly the best sandwich out there. Thanks for another banger.

You should try making beef bacon by putting your bacon rub on right away, and vac sealing it. Age it 30-60 days in the vac bag with the rub on it. Smoke it, and do your thing. Do a comparison that way. I think you'll find that the wet aging is almost as good without the meat loss of trimming after. Beef bacon is also made from untrimmed flank. It has a look of traditional bacon. Beef bacon used to be the rich man's bacon, while pork bacon was poor man's food.

I'm with you on this. A BLT is a tomato sandwich with bacon, not a bacon sandwich with tomato. If you're throwing any old tomatoes in there, just skip the sandwich and eat the bacon plain.

Just a heads up for folks, you can actually use the pellicle. Plenty of pellicle burgers on YT. Basically you just mix the pellicle in with fresh beef.
