I have been growing & using Chayote Squash for years as a Keto apple substitute. To make it taste more like apple, I use Green Apple extract that I buy on Amazon. No one can tell that it is not real apples!

I like Chayote. I found the fruit in the Kroger store. I like to snack on it just as is. I tried to grow it this year but it didn't survive. I just bought two more. I'm gonna take out the seed and try this recipe. I think I might add some cranberries to it. Do you have any tips for growing it? Since it's already fall, I'm gonna try to raise it in my greenhouse over winter. but I don't know what to do by spring, that's when mine died.

⁠@@Metqa Hi there, it likes a warm weather the same as cucumber, here are a few growing tips. Just place it on top of moist not too wet dirt (a flower pot is fine or any container) on the flat side, do not cover it with dirt the roots will find the dirt and feed from itself like a potato (only water the dirt around it lightly, do not water the chayote. Once it get to a size where it starts to put out leaves put a stick in the container for it to run on, you can keep it in your warm green house exposed to light until the weather gets warm, transplant it in a location where you would plant cucumbers. It will need a grape design trail to grow on and for easy harvesting (not a muscadine grape trails) Treat it just like a cucumber plant. Hope this helps. I’m from Jamaican and this was always a must ingredient for our hardy soups that we make, we did not use it for anything else, it’s good to see that it have other uses. It’s easy to grow and not a fussy plant it just need a warm environment to grow and produce.

I am 65yo and my Grandma was growing them in her backyard and using these (we call them Chokos in Australia) as an apple substitute when I was a kid. She had been using them since WW2 when apples were not readily available. Not a new idea, but a time tested alternative.

In Australia, chayote is called choko. In my childhood (I'm 75 now) it seems like every house in Sydney had a choko vine in the backyard. ☺

As charming as you ladies are, I am skeptical of pseudo stuff. Your tip about the Cream of Tartar is really cool! We grow our own succulent, sweet-tart apples - and have about a bushel in the house right now. During apple season, we just forget keto and have some real apples - unsweetened because they don't need it! (We don't do Halloween - go All Saints' Day! - but your meatloaf mummy sure is cute.) Help for getting through the holidays would be quite welcome.

Cubed dried keto bread is the only ingredient that u need to modify stuffing! It’s easy! I also dry my extra keto bread, because I don’t eat the Keto bread but once or twice a week so the extra is toasted and dried and then crushed and stored in a jar. Excellent breading and meatloaf and crab cake filling.

I do the same thing with other squash, like yellow, zucchini, especially a really big old squash. And I used a little citric acid instead of the lemon juice to give that apple tartness. I didn’t know about the cream of tartar, but mine tasted like apples anyway.

I made this for my BF and another friend (who eats low carb AND is recently allergic to apples) last year and they both loved it. He said it tasted like apple; she said it "kind of tasted like apples, but it didn't grab the back of her throat. 🙂 The easiest place to find chayote is at a Mexican grocer.

While I occasionally do eat a small apple (2-3 oz.) with peanut butter, I appreciate having a substitute for prepared treats that use apples since the number of carbs in such things (like pie) goes up astronomically. I’m sure I’ll be able to find the squash here in Milwaukee, even if it’s not at my neighborhood grocery store. Will have to try growing them next year.

Thanks for the tip about Instacart! I spend hurricane season in Vermont, where there's not much of a Hispanic population, so I didn't know if chayote was available. It is!! In three local (10 miles away) grocery stores! (It's Vermont. Things aren't necessarily close by, but the weather is better than Florida in the summer and fall.) I will be cooking this up very soon! (just as soon as I have a grocery list worthy of driving 10 miles.)

Looks really good. I tried choyte once and it wasn't close to apple, but I think I cut it too large, or didn't simmer it long enough. I'll try again. As for sugarfreelondonee, try her low carb porridge. It has ground sesame seeds in it. I love it, when microwaving, do it 30 seconds at a time, so you don't have a mess due to it overflowing. I put crushed walnuts ontop with sweetner and cream.

My trick is 4 weeks Keto. Hit it with 1 carb dinner, then 4 weeks carnivore, then another carb dinner. I have a 16 week menu I made in Google docs and sheets then i rotate it. Makes life such easier. I know my carb parry is coming so I stay away from carbs easily.

Your Walmart has Chayote!? You lucky Bug! Mine doesn't carry anything "exotic" . Luckily for me, both the local Kroger and Publix have started to carry chayote regularly in the autumn now.

We start with Thanksgiving in early Oct, then Halloween, then 2 kids' birthdays in Nov, then Christmas, then my Dad's birthday was Jan 1, my MIL Jan 4, and me, Jan. It's rough!!

Zucchini works for this too - I think it has 2g less carbs per cup than chayote.

They are great arent they. We call them choko's here in New Zealand Good hack, when peeling, do it under running water then you don't get sticky hands. They have the ability to take on any flavour,sweet or savoury. Pre- keto I would add them to stews and caseroles. ps they grow like weeds here.
