IMPOSSIBLE TO FLY - Pro Pilot Flies GTA 3 DODO PLANE 

The stunt jumps and the physics are very broken in the Steam version of the PC port, same with the Android port. The best version to play is the PS2 version, least buggy by far. Otherwise your advice is sound The main thing is that Rockstar half-arsed the port, so they didn't account for the fact modern devices are faster and don't address APIs (i.e DirectX or OpenGL) the same way anymore

This is why I'm TOO LAZY to fly the Cessna 152 (Dodo plane) on GTA 3 lol 😂😂

I remember I actually managed the Dodo to fly in a straight line, but that'd require no turns or a very slight turn the very least. But once you gotta turn the phugoid motion cycle kicks in and it takes like lots of time to make it stop. Still I love flying this thing, it's so nice watching someone else failing once you know the secrets of flying the unflyable plane.

Rockstar had a very tuff time back then but they were able to release a great game anyway

Really everything its real except the dodo difficulty, they just aint cared of the planes and make them easy to fly.

Nope, the Dodo wasn't supposed to fly. The fact that it takes off is a bug. It flies like the flying cars cheat, the game doesn't have proper airplane physics.

The rudder does what it's supposed to, so does the elevators and the (not visibly moving) ailerons. The game even tracks how long you are in flight and shows the statistics on screen. These are all deliberately designed features of the game. It's even written into a cutscene where donald love mentions that the authorities had seized the plane and were stripping it to look for hidden contraband, explaining the partially removed wings. Saying that the dodo being able to fly is a "bug" is equivalent to saying you fell down the stairs and accidentally wrote a book on the way down.
