Instant Pot Rice - Instant Pot Brown Rice, Quinoa, and Roasted Pumpkin (or Butternut Squash) is a fantastic way to use your Instant Pot Pressure Cooker. Delicious tender Brown Rice and Quinoa matched with Roasted Pumpkin (also pressure cooked in the Instant Pot IP-DUO60) is a terrific side dish paired with pork or chicken or a vegetarian or vegan dish. Interesting.. looks dry though... you have dry pumpkin with dry rice and quinoa... need a bit of liquid to bring it all together... I would have used the brown sugar and water to make a sauce instead and use that to drizzle on at the end like a syrup... at least there would be some ,moisture with no additional sugar/fat involved.

Hey Pesto! Thanks for watching and I appreciate the feedback. I did try to keep this particular recipe as healthy as possible. It is flaky and moist but the water and brown sugar simple syrup is definitely an excellent suggestion for it. Any one reading this , please feel to try this suggestion. On a Stove top, add to sauce pot 2 cups filtered water, 1 cup brown sugar, bring to a slow rolling boil for 5-10 min, drizzle on top. All the best and thanks for the time you took to comment.
