A look at the claims that processed meat causes cancer.

While I recommend you read the whole thing, Mark Miller (PhD in Pharmacology, previously fellow of American college of nutrition, 20 yrs exp as a medical professor) boils his article down like this:
"In short, dietary nitrate and nitrite do not provoke cancer via nitrosamines because they are:
• too stable
• the wrong charge
• must be converted to other reactive nitrogen species
• the rates that nitrate and nitrite are converted to nitric oxide can support cardiovascular functional optimization but are inadequate for nitrosamine formation, for the same reasons that endogenous production from either nNOS or eNOS do not support nitrosamine formation, and neither does saliva."
There is a rebuttal video titled 'What I've Learned' is Wrong about Bacon and Cancer.
Flaws with that video at a glance:
-While I did not mean to suggest “sodium nitrite added to bacon makes it good for the arteries” in my video, Mic does not present sufficient evidence to claim nitrate/nitrite from the plants is good whereas nitrite from bacon is bad. (Fun fact: 93% of the total ingestion of nitrite is derived from saliva)
-Skips over some very complicated science with ad hominem logic.
-Misinterprets me as saying ‘nitrosamines cannot be formed in the body,’ I didn’t say this.
-Confuses red meat with processed meat.
-Uses studies that are looking at “apparent total nitrosamines” rather than specific nitrosamines in meat. This is important because there are several types of nitrosamines with different severity of effects on the body.
-His data for endogenous formation of NDMA is based on ​in vitro​ studies ​looking not at red meat,​ but fish, and in specific, a type of fish that has the specific precursor to NDMA (DMA) in its muscle. Meat does not typically have this precursor. The study even found no NDMA formation from grilled meat.
-Mic confuses ​total endogenously formed NDMA​ with ​NDMA formed endogenously as the result of eating red meat/processed meat.​ (The study he references makes no mention of endogenous NDMA formation ​via meat consumption​.)

It’s AMAZING video that initiated critical thinking in my head! It doesn’t suggest one way over another one, it’s wandering about statements in studies, compare, asking question, etc! All people criticizing this video don’t provide any sufficient evidence and data that support their claims! Guy is not probably a doctor, pharmacist or even biologist, actually it helps him to think out of box! He’s obviously very intelligent to be suspicious over all of these studies and way they are conducted! I watched most of his videos and he become my signature subscription!

A perfect example of The First Law of Toxicology; "The dose makes the poison." Reading food and diet related forums and such for over a decade, it's obvious that the majority of folk think that ANY level of a "toxin" is something to wig out about. I grew up during the above ground nuclear testing era. (I missed Hiroshima and Nagasaki by nine months.) No doubt I have quite a bit of radioactive isotopes in my body. Ditto with lead, which was added to gasoline to increase octane. Breathed a lot of leaded air for decades before all gasoline became unleaded. My health is better than great. I'm 74.

@NOTREALLY HANKAARON You have to identify the quantity at which you are talking about. And that work has been done. Somewhere north of 50-60 pounds a year leads to metabolic disorder and usually, obesity. Small amounts don't hurt one bit. If you eat fruits and vegetables, you are eating sugar. And it's the same molecules as table sugar, fructose and glucose. It is the former that fucks up our metabolism. Glucose is just broken down starch.

I eat my bacon the 2nd way. Dr. Berry was talking about this as well. Nitric Oxide is good for vasodilation; we use it in patients with pulmonary hypertension.

WIL, I really liked and appreciated your comment near the end of the video, 11:33 "selecting meat quality needs to be prioritized much more by those who can afford it." For most of the population, If they only ate grass fed meats, eggs etc, which are touted in most other youtube nutrition vids, we would probably get closer to starvation than being healthy seeing as abiding strictly by those guidelines are, for most people, not financially realistic.

I think what we are actually going to find in the future is BEING POOR is the most significant indicator of most health issues. Due to stress, poor access to nutrition education and fresh food, poor water quality, and environmental pollutants.

The word 'suspected' tells us a lot. Questionaire studies are the next best thing to worthless when it comes to conclusive studies. Better get rid of saliva because it has both nitrates & nitrites.

I feel you are a voice of sanity in an insane world. The practice of questioning EVERYTHING is alive and well. It's a shame we as a society could not demand real studies before we to the jab which we now know was worse than what it could NOT prevent. If you see the flames, smell the smoke and have a burning sensation you may be experiencing a fire. if you see it on the Internet or red it in the paper the odds are it's not what they report. If I could improve your fantastic report I would ask for links to the studies to enforce your words. The studies you reference is great for all who question (as they should) your interpretations. I for one do click on those links and have found some which are not what they say they are. Keep up the great work.

This is only anecdotal, but every centenarian I've ever met (about 15) told me they ate bacon and eggs everyday for breakfast. Portion control matters, overall diet matters, vices matter, exercise, stress, all matter.

I eat pounds of red meat a day. I also try to limit my carb intake. I eat zero vegetables and zero fruits. In fact, earlier today I had 7 pieces of chicken, 8 scrambled eggs, and about a pound of bacon. Am I overweight? Would you even believe me if I said no? I have an athletic build.

@@osscar29 Sauna is great to use. It makes our body work hard to cool down but yet is not physically exhausting like running would be. Usually we have to physically work hard to sweat that much but not in the case of using a sauna

Fun fact: NDMA is actually yellow. Also, Salami is a suitable treat for cats. Most cats should be just fine with a couple pieces of salami as a treat every now and then. Histamine count. Most processed foods have a certain histamine count that on the surface, is going to cause fatigue, bloating, and lower brain functionalities. But later on, those problems are amplified on a yearly level that the patients organs are shutting down or developing malignant tumors. The human body is a marvel to wonder... and we fed it junk

Thank you so much for all of your wonderful content man. I personally attribute your channel with saving my life man. You opened my eyes to the severe dangers of refined sugar, effects of calorie restriction diets vs. Complete diets, and amazing content regarding nutrition. I have lived on bacon being on the keto diet, the only side effect I've had was weight loss and an increase of energy, but I was eating organic bacon to ovoid glyphosate which is the real killer.

As a scientist I liked much of your video, however your conclusion methodology is flawed. You said "assuming we can apply this mouse data to humans . . .", however, we cannot in fact simply assume that. You cannot presumptively apply the NDMA rat data to humans because rats live only a few years, whereas humans can ingest potentially problematic substances for decades. We can't know what happens after 10 or 20 or 30 years of consumption by using small animal equivalences, because they do not posses human equivalent lifespans. So we are back where we started when it comes to whether or not these chemicals are harmful in small quantities over the long term--which is to say, who knows? Maybe, maybe not.

Yes it is interesting why rats are used so often for medical trials - particularly relevant are the dietary trials (Rats have as you mentioned have very different metabolisms) - I would have thought after rat trials - Pigs or similar animals (closer to human biology) would be appropriate

observational studies AND metastudies are absolute crap... the questions are difficult to formulate without an agenda or bias and most people are VASTLY unaware of many issues like ingredients with something they didn't make themselves, frequency of use, un-diagnosed or mis- diagnosed comorbidities, genetic influence, whether food is organic, has pesticides, is GMO...ALL KINDS OF ISSUES that CANT BE ACCOUNTED FOR. they are unscientific at best and misleading, often on purpose. metastudies just take other studies often will nilly and reprocess them...difficulty in understanding why these are even allowed to help prove or disprove hypothesis in primary journals. lots of bad science accepted at face value

The problem is not meat it's a poor diet. You should not be eating processed meat and you shouldn't be eating higher protein than fat. Higher than 40% of your diet in protein will start to cause problems. 60F/40P/0C or 60F/30P/10C both work well.

Too many people are laboring their minds with the questionhow bad is this food I want to eat instead of asking the far more important question, how good is this food for me? Life isn't about trying to get away with pushing the boundary as far as you can to get away with things. Maybe store asking what is optimal for physical function. On top of that remember that every bad thing you eat is a missed opportunity to eat something good. Saying how much of this can I eat and still avoid cancer is not an equation that equals health and we'll being.

Processed meat does not cause cancer. It is not as healthy as proper meat, and you should get at least 50% meat content and look out for crap in the ingredients, but it is not cancerous.
