PALABOK RECIPE
Prawns stock
250g prawns heads and shells
2L water
Procedure:
1. In one pot mix the prawns and water.
2. Let it boil for 15 minutes.
3. Strain and set aside.
Palabok Toppings
250g prawns (cleaned and deveined)
3 calamari heads (sliced
250g pork belly ( boiled and thinly sliced)
2 spring onions ( chopped
200g chicharon crumbs
4 boiled eggs ( sliced )
4 calamansi
Palabok Sauce
2 mama sitas palabok mix
Prawns stock
3 minced garlic
1 onion (chopped)
2 spring onions ( chopped
4 tbsp veg oil
Procedure:
1. Sauté garlic and calamari, season with salt and pepper cook until golden brown and set aside.
2. In the same pan Sauté garlic, onion in medium low heat
3. Dilute Mama Sita's palabok mix in prawns stock and add in to the pot and let it boil until it becomes creamy in consistency.
4. Cook the Palabok noodles in one pot with seasoned boiled water until soft.
5. Strain and let it cool down with cold running water.
6. Assemble it in one big plate add the sauce to the noodles and toppings.
7. Enjoy with your family and love ones!
