The Caribbean is without doubt my fav place to visit, the food, culture and people are amazing. As soon as the plane touches down, the bassline starts to rumble, I'm getting emotional now.
Good Try but leave out the lime juice and apple cider vinegar. Use the two items to wash the chicken and rinse after with water to remove tarty taste and acidity.
Jerk chicken is one of my favorite ways to cook/eat chicken. So many layers of flavor that just work. Sweet, spicy, savory etc... Sooooooooo good, if it's done right!

I used 6 Thai chilies instead because my grocery store doesn't have scotch bonnet and habenaro is too spicy for my wife. They worked great and I had extra in my fridge from the szechuan chicken I made the other day. Great recipe!

(Try it with spicy white vinegar just add different kinds of blended chili, garlic, peppercorns, then some soy sauce Kikkoman type, some Oyster Sauce then Worches sauce. Experiment. Good dipping sauce for many foods including rice, if you haven't tried. Or white vinegar, chiles, garlic, red onions, peppercorns, soy sauce then worches. Dip fried pork and stuff. Cuts out fatty taste, etc... Haha. Add mayo for creaminess.)
