That was well prepared and cleaned I don't eat sea food but love to watch Japenese cook these amazing dish very satisfying always makes me so hungry afterwards!
I went to this restaurant one when I was visiting japan , Japan is my favorite country to visit. I love Japan is lovely country and respect people in the world 🌎 and food are very healthy, is a lovely people with lovely country.
I wish they could at least kill the poor eel before cutting it open. It just seems so cruel, and I'm really not sure if it makes it any fresher killing it in this way.
It is killed. The first cut just severs the spine and leaves a bit of flesh behind so it’s easier to fillet. Real cruelty is when you fail to sever the spine on the first cut and the eel will just go crazy which makes it even harder to grab. Unagi chef here and I’ve experienced this firsthand many times (sadly)
i'm impressed, killing the eel and slicing it in that manner while it's alive is so difficult to do. you can potentially hurt yourself while sllicing it that way.

I just tried to do this at home for the first time. Believe me guys, it ain't that easy the way it looks. It took me an hour to fillet just 4 eels and it was all a mess. 😅
Te Rito Studio Music well clearly u don’t know anything about Japanese food. they don’t clean it because the blood and it’s minerals give the eel a better char on the grill
