When I was young all my brother and sisters were slim and muscular and our grandparents and uncles were all muscular. But now all our children are like pumpkins and gourds. I could hardly see pure natural muscles around anymore, Tight chest and belly muscles were normal during those days. Some bulky fatty muscles from gyms can be seen nowadays. Maybe it's all because of the foods and habits we are now living life.

Question: Are you supposed to clean the guts and bile out, after you slice the lobster down the middle? Not sure if Im seeing correct but looks like there's still guts or stomach bile when it was cooked on the skillet

I have always liked the Japanese art of cooking. The way they use different ingredients into one final dish. Herbs, Spices, Vegetables, Cereal ! Frying, baking, boiling, steaming. And finally one fine dish.
Likely not long. This was probably a 5-6 course meal where you have to reserve your seating weeks in advance. The kind of place you would want to take your date to for the experience. It’s expensive, but probably some of the most memorable food you've eaten. Then afterward, you head to a ramen place to get your fill.

Boiled and pan fry? Boiling makes it loses its taste because all the flavors are gone with the boiling water, they should steam it to preserve the best flavor of the lobsters. This is a big mistake by the chef. That's just my humble opinion as 40 years being a seafood chef. Remember, always steam your seafood unless you're making a soup seafood dish.
I'm sure it's because this restaurant is in New York. In New York, there is criticism for making the shrimp feel pain for too long during the cooking process, and it is also legally regulated. So the chef has to make the shrimp die quickly first. He may know that this will cause the shrimp to lose its broth, but he has to do so regardless of his intentions. If his restaurant was in Japan, he would definitely cook the shrimp alive and not waste the broth by letting it escape into the boiling water!
