Bluefin tuna is one of the most highly prized fish used in Japanese raw fish dishes. About 80% of the caught Atlantic and Pacific bluefin tunas are consumed in Japan. The fish is renowned for fetching high bids at the first auction of the year in Tokyo's Tsukiji Market. The world’s most expensive fish is the 222-kilogram bluefin tuna that sold for $1.8 Million (155.4 million yen) in January 2017.
In this video, a large tuna is separated into sections of differing grades and prepared into a delicious sushi meal.
Japanese began eating tuna sushi in the 1840s, when a large catch came into Edo [old Tokyo] one season. A chef marinated a few pieces in soy sauce and served it as nigiri sushi. At that time, these fish were nicknamed shibi - "four days" - because chefs would bury them for four days to mellow their bloody taste.

I love this guy. Took his time to show the fish, explain what was being cut and done. Even though I didn't understand Japanese, he pointed it out and at times tried to translate it. If I was an owner of a restaurant, this is the type of person you would want to be the face of your business to the public. Great job. Nice fish!

That's not a sword, it's a traditional Japanese knife, it's so they don't have to use a lot of the sawing motion to cut through a large fish.

I love the fatty parts of tuna... in America, usually all you get in Sushi shops is the really dark meat that tastes of blood and iron. That's still good, but the fatty Tuna is just so much better. I also love Japanese people tho lol, they have so much more... respect and enthusiasm for what they do. In America food is just food but over there it's an art. For example, when they cut this fish he puts on a show and lets everyone else enjoy it. Also, if you go to a good Sushi restaurant they will make the food right in front of you and tell you everything about it. It's like watching the Food network but live, haha.

Since the 2011 earthquake, Japan has been importing a good number of bluefin tuna from US North Atlantic fisherman... Within 24 hours after it's caught, the tuna is flown to Japan where local brokers are there to receive it, cut it up, then auction it to wholesaler/retailers who mark it up more... Since tuna is a prized delicacy in Japan, people pay huge prices at the fish market, as well as the sushi restaurants...

Nati Whatever It's a small fish to be honest. Tuna grow much much larger and the massive Tuna that were available decades ago are extremely rare. Asian and South American and some North American and Austalian fishers have over fished so many species of fish that they do not get the opportunity to grow. It got so bad with Tuna that more than 80% of grocery stores in the US sell fake Tuna. They may not do it knowingly, but they do. The suppliers often use things like Escolar as a substitute for Tuna and dye it pink. It was found that over 74% of sushi restaurants and regular restaurnts in the United States also sell fake Tuna. Mackerel, Salmon, etc. They're all over fished and a large chunk gets thrown in the garbage because humans tend to be wasteful. There should be a much greater respect for other species. Asian markets in particular destroy animal populations without second thought. Go and watch Jiro Dreams of Sushi. A great documentary about Japans finest sushi chef and the only living person declared a national treasure.
