Ingredients
For the marinade
1 dried guajillo chilli
1 jalapeno chilli
1 Madame Jeanette chilli
1 Habanero chilli
Thumb of ginger, peeled and roughly chopped
1 clove of garlic, peeled and roughly chopped
1 tsp All spice
½ tsp brown sugar
1 tbsp runny honey
1 tbsp sweet soy sauce
1 tbsp white wine vinegar
1 tbsp vegetable oil
500g skin-on chicken thighs and/or drumsticks
Twist of coriander
2 limes
Method
Slice the top off the dried guajillo chilli and shake out and discard the seeds, before toasting in a warm oven for 30 seconds. Place in a shallow bowl and cover with water to submerge. Soak for 15 minutes to rehydrate and bring out the flavours. Drain and place into a mini food processor. Slice each of the remaining three chillies lengthways, and add half of each one to the processor. Add the remaining marinade ingredients, and blitz to form a smooth marinade.
Cover a baking tray with tin foil, and place the chicken on it in an even layer. Pour over the marinade, and using your hands, distribute the sauce so that each piece of chicken is thoroughly coated. Cover, and marinade in the fridge for a minimum of one hour, or overnight.
Preheat the oven to 180°C. Cook the chicken, uncovered, for 40 minutes, until dark brown and golden. Remove a piece of chicken from the tray and with a sharp knife, cut it at its thickest point to ensure the meat is cooked all the way through. To serve, garnish with coriander leaves, lime wedges and a sprinkle of salt.

Important to note the second syllable is stressed. Also, the H is silent in habanero... and it should not have the ñ, which is a Hyperforeignism error.

Absolutely. This wasn't authentic Jerk Chicken. Scotch Bonnet, Spring Onion, fresh Thyme, White or Pickling Vinegar, Ginger, Garlic, Allspice, Salt, Black Pepper, Lime juice, and a neutral vegetable cooking oil. No honey. Blitz in a Blender, massage into chicken and refrigerate overnight. Grill, barbecue, or bake in oven. Serve with Chips or Rice and Peas, with salad or Coleslaw. Try that instead.

Mr Quilter sir, where are the spring onions, the scotch bonnets or the thyme? Jamaica should apply for a DOP licence, like the Italians do with their cheese/ham/vinegars, to stop people calling any old thing jerk chicken! This definitely isn't jerk, but looks tasty nonetheless!

Jerk Chicken needs fresh Thyme. Without it, it's just a good chilli chicken. You can also put allspice seeds on the barbecue coals to improve the flavour.

Was it spicy as fuck or tolerable? I'm not to good with spice but have had some jerk chicken and thought the flavour overpowers the spice.

Sometimes the trade isn't what it could be. I live in the next biggest city of Sweden and here you can only get red and green chilies. Chipotle if you're lucky and piri piri and habanero if you're really, really lucky. :/

I live in the same city and chilies aren't that hard to come by in my experience. We have a market near us where I've always seen habaneros in stock. Chipotle isn't a chili variety, it's just smoked jalapeno and I've found plenty of jalapenos. I'm sure I could find other chilies too. If you'd like to know any places ask me and I'll be happy to tell you but I'm sure you can find chilies around your area too. Although I do agree that red and green chilies are much more common than other chili varieties, especially in the bigger generic supermarkets (Ica, Hemköp).

+zaryyab mughal Hahaha, when it comes to those spices, they might look like a lot; but if you actually use a proper tablespoon, you'll see how surprising it is. Besides, every cook always adds a bit more or less, that's just for the viewer to have a balanced idea.

Greetings Sir, My compliments on your effort. The dish looks nothing if not captivating. I believe the word is "delectable. With regards to the enunciation of the word 'guajillo'. it is Gwa-he-yo. For the first syllable it is like there is an imaginary 'w' between the 'g' and a. Also pronounce the first 'g' but do so gently rather than with fervour. As for the second syllable: in Spanish the 'j' sounds like a "h' and also the reason I said he is because the "i" is soft as in "India" rather than harsh as in Ipod or iconoclast. Lastly, the final syllable the double-l is pronounced like a "Y", but again it is soft, hence it is not 'YO" like Rocky or a rap song, but "yo' This is the Castillian, ie classic Spanish accent: There are some Hispanic accents that may sound a little different, but it is not the word rather the accent that is slightly different like a Yorkshire and and Essex or more simply an English and Australian. Please keep the recipes coming please and I do hope this helps.

Hey man love where you are going with this but not exactly wise to me telling people to handle a pepper that hot with their bare hands let alone after you blitzed it. Highly recommend people don't touch all that with their bare hands. Not to sound like a whimp but some people have sensitive skin and could be in for a world of pain doing what you just did.

How can you call it jerk without using the Scotch Bonnet pepper? The habanero is close but doesn't have the sweetness of Scotch Bonnet which is characteristic of all jerks. Why do you insist on bastardizing good food?
