The French gentleman was very serious about his decision, cheers to him. I'd say between $13-15 US for that sandwich in a sit down establishment. Side of something, anything, potato salad to kale crisps, and people would pay gladly. Good recovery from the roast beef episode, Busker, I think you got cheated on that one.

I'm sure that sandwich tastes freaking awesome. That amazing beef you cooked is all you need and buttered toasted bread. A lot of people put cheese on french dips, but with uber beef like that I wouldn't do it. You want the bread to be toasted pretty dry so it will soak up more of the jus. Also, the gravy you made is probably awesome too, but you dont want to thicken it or it wont soak into the bread that well each time you dip -- it's better left as jus. This is one of my fav things to eat, so I am compelled to comment :)

IMO the sauce for the dip was a little thick. what i've noticed ordering that sandwich is that most dips are just barely above beef stock thickness so that the sauce soaks into the bread of the sandwich. but it looked amazing

Growing up in Southern California and driving an hour to go to LA to eat at Philippe's. I got a tear in my eyes man. You managed to make your own version of an LA classic. We're not used to that kind of beef down here in SoCal, but that's pretty special. Now, they might kill me for saying this, but I'm going to tell you some of the secrets to the best French dip ever. Elevate the beef using a bed of carrots, celery, and onion. season the beef with sea salt. Find every herb that is good with beef to season the roast. Once the beef is done, take all of the cooked down veggies and add them to a pot, throw in fresh bay leaves, put some homemade beef stock in there, put in beef bones, and let it reduce down until the bone marrow comes out. After that, add the pan drippings and reduce even further. Only condiment needed is mustard, preferably Philippe's mustard. Dip the bread into the au jus then pile that beef onto the bread. Easy right? Back to the matter at hand: your take. I'm going to be brutally honest here. That leftover roast beef was killer. Using the onions was a great bonus. The amount of au jus was ok. I will compliment you guys though. You know how to eat our beloved sandwich. Where's the mustard though? Next time try it with mustard, you'll thank me. The cheese is ok, but you want the beef to shine through. Not sure what kind of bread you used, but I hope it was crusty. More nooks and crannies to soak up that delicious jus. For your sandwich, I would probably pay $10 (including taxes to account for how expensive AF food in London is). If you're ever in LA, stop by Philippe's and you'll see how the real deal is made. Peace!

John my man, as an European who uses Euro's I would NOT pay 12 euros like that Frenchman said (they swim in money on that country xD). But I would go for about 7,50 euros since it is a sandwich with a 90 day dried piece of meat and that makes a huge difference on the price (also, I would need to take into account the size of said sandwich) Btw, I've watched all your videos and I'm sitting here with nothing else to do, so...you know...another video please please please :)
