For fried chicken, I discovered that MSG is worth its weight it GOLD! It's totally safe (unless you're one of the few people that have strong reaction to it) and you don't need a lot to get amazing results. For 4 pounds of chicken drumsticks I use one and a half to two teaspoons of MSG for the buttermilk marinade and a teaspoon in the flour dredge. Best fried chicken I've had in my life and a source of great pride whenever I have guests. Fried chicken with mashed potatoes, gravy and steamed green beans is always a winner meal!

I think Chef John/foodwishes had the only reasonable objection to it that I’ve ever seen, in that apparently it makes him feel hungry 20 minutes later if he has something with loads of msg. Other than that, yeah, it’s safe for most everyone except some very few people who seem to have an intolerance for it.

When I watched the video myself and Sharmaine said "Definitely bones", I had to pause the video until I stopped laughing, which took a while. I'd say I was laughing at it for five or so minutes before I could continue.

So matpat’s food theory went through several of the leaked kfc recipes a while back, where they said apparently Sanders himself pushed for the spice mix to be available for purchase when he found out some of the franchisees no longer cared to use his recipe after he sold the company. That one volunteers two spices that aren’t in the leaked recipe Babish uses, and neither matpat and his wife nor I think the chicken from that recipe is quite what KFC is selling; it’s probably fake. Still makes a good chicken though, I like it for what it is.

I feel like sounding or being dumb is just kind of human nature in a nutshell. We can joke all we want about people not knowing something we do in depth, but everyone has blindspots in their knowledge, reasoning, and logic. The bad part is misinformation spreads like wildfire. The good part is looking back at confidently incorrect people and having a laugh in hindsight.

I was not expecting to watch this video, with one of my biggest existential-takeaways being "Do I...hate pie?" Because after that intro discussion, I was myself forced to confront the (incredibly unimportant in the grand scope of things) reality that (other than Pumpkin Pie, which is only pie because of the crust) I have never had a pie of ANY kind that was surprisingly good. Passable? Sure. Good? That's generous. I actually tried to think of something that blew me away too, Nick :D

I've literally made Chicken Cordon Bleu for our home economics class and you know what? I got a full 98 on that shit. And when I tasted it, I literally had to sacrifice 5 points off my grade so I can eat it all for myself. I fucking loved my design so much that I had to hurt myself to enjoy it.
