The Khan biryani is yet another elaborate and exotic rice delicacy made of marinated spiced chicken and aromatic rice (basmati rice) cooked together that conjures up images of a grand feasts or royal celebration. This dish is heavenly with the subtle sublime blend of flavors, fragrances, textures and colors. Biryani dedicated to Movie My Name is khan Khan

Ingredients
as needed atta dough
500 grams basmati rice
500 grams Basmati rice
2 number bay leaf
1 tsp chilli powder
1 bunch coriander leaves
0 coriander powder
1 cup curd
5 number Dry garam masalas
pinch food colour
1/2 tsp garam masala powder
1 tbsp ginger garlic paste
1 number lemon
2 bunch mint leaves chopped
3 tbsp oil
3 big big onion chopped
as needed salt
pinch Turmeric powder

Directions
Take a Bowl, Add chilli powder,salt,turmeric,garam masala powder,coriander powder,ginger garlic paste,lemon juice,oil, mix well and add chicken rub the chicken well with this masalas and pour curd do not mix the curd, keep in fridge for over night.
Boil Rice
In a muslin cloth add all the spices and wrap it and keep aside.
Now in a pan add oil then add chopped onions, salt, cook till slightly golden brown colour once it is done remove if any excess oil,and also half of the onion.
Now spread the balance fried onions and pour the marinated chicken spread it equally, and put the wrapped masala dry,now spread half of the rice,onions,mint,chopped coriander, now spread leftover rice,onions,mint,coriander leaves.
finely sprinkle colour close it with a lid but the steam should not come out for this take a chapati dough and make a thread put about the dish and close it with the Lid and put some weight on top of the lid to avoid the steam.
cook for 30 to 45 min.

Sir thanks a lot 40% i know how to cook chicken biryani and other food items. About after watching ur programms in you tube and in Z Telugu regularly now i become 80% good cook and now i am cooking chicken biryani very well for my two daughters and my wife. Previously my second daughter wants to go always Mcdonald,Pizza hut and KFc. Now because of my cooking abilty increased by watching ur youtube and Ztvprogramms now my daughter insisting me to cook food for her. I'm a chef at a university and we have many East Indian there. I try my best at making as close as possible authentic Indian food. They say I do very well at it. My ideas are running thin. Love you Sanjay. One of my online chef friends boil the rice to 2/3rd with the masala potli before layering it on the meat and I found out that it brings out real rich flavor. Your spirited interlude really tugged at my heart. Love you for that too

Dear Sanjay When marinating, use a small bunch of Fenugreek Leaves (a tea spoon of Kasoori methi too will do). It adds another dimension to hour Hyderabadi Biryani

so happy to know that you were brought up in BHEL Township. I was brought up in NLC Township myself and I 'm able to connect with in many of your thoughts and expressions especially cooking. I've made many dishes at home from the recipes here and my whole family loves you. Wishes from all of us. this is just A WONDERFUL videoclip,...even though i am a vegeterian. i just in stead of the chicken use potatoes, and instead joghurt i use fresh coconutmeat and milk. i know funny but still very nice. most of all i like the chef himself! what a positive human being. thank you

Love you man. I am in Northern California and its great to get your perspectives. Its wonderful how you explain in detail everything, each ingredient, what it does etc. Also you are philosophical and go into the depth of each dish, where it originated, etc. like the different between pakki and katchi biryani. No worries! :) Yea you're right! I remember researching this everywhere, trying to find out what those two were. My female family members and friends had no idea as they'd never used it in their cooking before and they're of Indian/Pakistani origin! And they make great Briyani, so I don't think it's these ingredients that will make the difference (I could be wrong). I really do believe it's all in the technique! I actually came across the two ingredients in a Sri Lankan cooking video! Good luck!

The best way to avoid burning is to pop the biryani pot into the oven at 375C for an hour. But do give it the 5-10 min of cooking time on stove first. I do this all the time and have yet to had any burning at the base whatsoever.

Thank you so MUCH! Finding Dagad Phool and Nagkesar is really tough though. Hopefully eliminating these two ingredients will not affect the Biriyani greatly.

Hi Chef! Hv tried this biryani and it turned out to be good except that at the bottom where i had placed the muslin cloth wth spices got slightly burnt. Many thks for showing us such wonderful recipe videos. Of lately say almost a month tht i came across your web site and hv been preparing many of your recipes as i love cooking. @SasyBecause Yes it looks like basmati rice. It is very long and fluffy when cooked properly. I buy the Pakistani basmati and it is has a nice soft texture and nutty floral aroma. It is very good rice.

kachi yakni Hyderabadi Biryani is the best! From a Hyderabadi living far away atm, but always love my biryani's! Can get authentic flavours without addition of chilli powders, as originally the chillis never used to be added in olden days of typical hyderabadi biryani..until it became commercial in restaurants etc then came the added chilli, the whole spices themselves release such a wonderful aroma and taste to the basmati rice and chicken! Well done, Enjoy! P.S. Hope food can unite all just like the pen in 2015 :)

This is a fantastic recipe, I made this and it was excellent, which takes a lot for me to say as I’m quite critical when it comes to food via RU-vid The only thing I must ask is what are the spices that goes into the muslin cloth? I got the obvious ones but wasn’t sure what the leaf and tiny black balls are.
